What Have You Cooked Recently?

I made breaded cod with sauted peppers and tomatoes on the side. The cod turned out really nice but I underseasoned it, so next time I'll have to give it more attention in that regard. The peppers were perfect though. I also had some fresh mozzarella balls on the side.
I also made popsicles from a stupid-easy recipe involving yogurt and raspberry jam. It's been hot and I want to be a little healthier with my treats so homemade popsicles are perfect. I bought some peaches for another recipe involving roasted peaches and jalepeno.

Sliced bell peppers into rings, put them in a pan and cracked an egg into each one. Shake of garlic salt and twist of pepper. Served in a biscuit with bacon and cheese. Presentation wise its cool but making sure the egg cooks through is a hassle with less pan surface area.
 
Polenta chips (fries for my American cousins). Make polenta (use vegetable or chicken stock for the liquid), stir in grated parmesan, pour it into a parchment lined tray, let it cool and then chill. Turn the slab onto a board and cut into chips, dust with polenta flour and fry until cripsy outside and gooey inside. Eat.
I had these with chicken thighs and French beans, made a sauce with the chicken pan juice, a little white wine and some polenta flour as a thickener. Delicious, I was proud of it.

Edit: Mrs O'Keefe, who may as well be called Mrs Malaprop, calls these placenta chips.

Cornstarch a shit.

Made some chicken and mashed potatoes.
Boneless skinless from Aldi, paprika, pepper, sazon, sage. Did it in the oven
Got a few pounds of tiny potatoes, heavy salt on the water, then mix of most of a stick of butter, a half dozen cloves of garlic, some dehydrated onions, a splash of milk, and the drippings from the chicken.

it's shit and people who need it are shit
We call it cornflour: actual corn flour (like you make cornbread from} is hard to get here. That article is a very good guide to thickening sauces, knock it at your peril.

Did the same thing yesterday. It was amazing. Used the stock I made from the pieces of chicken, thighs on the bone with the usual suspects, onion, celery, carrot, garlic. Used the chicken in the dish, used the bits and bobs of skin and fat for the dumplings. It was so good and so worth the effort.

if it includes cornstarch then it's not that good
It's for sure a lazy ingredient. Why reduce a sauce to thicken it when you can just dump in corn starch lmfao
That said I find its a great way to make crispy buffalo wings. Dust the wings in starch, bake them, and now they're nice and crispy and have a surface that can hold the delicious buffalo sauce.
