What Have You Cooked Recently?

Tamago Kake Gohan!!! Top Five absolute faves, no doubt. Cheap, easy, fucking delicious. Raw egg mixed into hot rice, topped with pickled cucumber and pepper, sprinkled with furikake and soy sauce.

Sweet potato Spanish tortilla. It takes a while but uses 3 ingredients and is not difficult. (Sweet) potato, eggs and onion.

Lots of olive oil (shallow fry), hot pan, cook sliced onion from cold. When oil is sizzling, add peeled and sliced potato. Stir occasionally until browning on edges of onion and potato. Crack eggs (depends on how much you make, I used 4 for half of a huge sweet potato and 1 onion) into a bowl and drain hot potato and onions and put with the eggs. Crack salt/pepper, roughly mix with fork then leave for 30 mins (do clean up in mean time), mixture becomes very thick. Add into lightly oiled nonstick pan at medium heat. Cook on one side for about 3 mins, then flip using a plate and do the same on the other. Serve and eat. The onions make the dish "sweet" and the sweet potato only reinforces it. Centre is the best part as is softer.

Good chef for Spanish food online is Omar Allibhoy, he's the one I got the tortilla recipe from. Just happened this time I only had sweet potatoes, and they work just as well. His directions are clearer, though I adjusted the portion size.

Put in tortilla.
And the cultural appropriation only makes it more delicious. Post to Twitter for bonus points as assmad white people accuse you of that.

It was in the mid to high 80's here this weekend so I pulled out a summer staple: chilled chopped chicken and bacon salad with celery, tomatoes and a yummy dressing of mayo, minced green onions & parsley, lemon and worcestershire sauce. Topped with sliced avocado. Nothing earth shattering but hits the spot on a hot winter day.
