What Have You Cooked Recently?

First attempt at a homemade Japanese chicken curry (it’s not truly traditional as I used my own extensive mixture of vegetables [instead of just carrots, onions, and potatoes] and extra red pepper for spice). Not a beautiful looking dish but tastes heavenly.

Trying my hand at Russian shasklik. Cubed up a 2lb pork shoulder for the meat tonight. For the marinade, got three big onions (sweet onions this time. They were bigger than the white onions at the grocery store), ½ cup of red wine vinegar, 4 tablespoons of sunflower oil, some chives, some sea salt, some ground pepper. Letting it marinade for about 4 hours tonight before I throw it on the barbeque.

I made a pizza that was pretty good, I talked about making (s)crap pizza in the Showbiz Pizza thread and then got the urge. It turned out looking gorgeous, nice color and crust, the shape was very nice, I'm way better at making pizzas than when I was a student many years ago...

The problem with spontaneous student guerilla pizza making is that you must use what you have, you don't go out on the free market and buy things, probably because it's really late at night or you're broke. This meant that the cheese was a white cheddar I shredded combined with a Västerbotten(parmesan-like) and the topping was pepper salami with smoked ham. It was a bit salty. It looked really nice though, probably the best looking pizza I have ever made.
 
Flatbreads.
Bought goats' milk yoghurt on a whim: turns out it's absolutely fucking gross, like yoghurt but with a rancid cheesy note. So I threw in some SR flour and made it into flatbreads and they were great. Just 3 ingredients and super quick if you ever need some emergency bread or find yourself with yoghurt to use up i guess. They last and freeze well, too. I just dump in flour until I've got a dough then shape them with tons of olive oil and just bake them for 10-15 minutes.

Scones is another thing you can dump leftover yoghurt/kefir/fil/sour cream/creme fraiche into. It uses baking soda instead of yeast and baking soda keeps forever so all the ingredients are likely to be in your kitchen. They're so easy and fast to make they can be made spontaneously in very little time. When piping fresh out of the oven they don't need more than butter melting into them to be great, anything added beyond that just makes them better.

Timeline:
Make the dough while the oven preheats, it won't be kneaded nearly as much as a bread dough, it's going to be rough so they come out crumbly. That makes it very fast to make.
Put them into the oven when warm.
Put on the tea, when the tea is done(10-12 minutes) so are the scones.
From start to finish it takes 20-25 minutes.

Variations are plentiful and easy.
Put sugar into the dough, it balances nicely against the salty butter and cheese.
Cinnamon? Cardamom? Saffron? You can put those things in there. Fennel? Ooh. Some might not like that one if they're not used to fennel bread. Anis? Maybe not, it could be good though.
Dried fruit? Nuts? A finely diced or grated green apple tossed in some sugar? Yes.

That sounds and looks delicious. I recently discovered molé sauce and I love it. I bought a bag of gaujillo chilis but haven't used them yet. Pastes and jarred stuff is alright. It's weird how many recipes exist and how wildly different they are.

12 hour sous vide London Broil seared over a wood fire. Served with mashed potatoes. Blend of Yukon Gold and Russet and topped with manchego and chives preceded with a salad of red and napa cabbage with shredded carrot. Dressing was homemade balsamic.

Edit: Holy shit I just realized how bland this description is...next time I have to get a picture before the animals my family gets to it.
