What Have You Cooked Recently?

Last night, I made chicken soft tacos for my friends, who tend to appreciate that I am a sperg about cooking.
 
Just to erase the memory of @LordKaT's horrible creation, I had to do this.

The corn tortilla chips and seasoned ground beef are kind of buried under all of that other goodness, but trust me, they're there. And I made sure the ground beef was really spicy since the spiciness of it had to come through all of those other ingredients too.

You really went out of your way to make that horrible, though. Probably the worst part was the beef. There is nothing worse, more cheap and disgusting than dollar store hamburger. Also anything where they have to put qualifiers on the package to point out that something isn't cheese is always going to be horrible. Anything called "cheese food" is neither cheese nor food.

If you had omitted that beef which was probably 99% ground up assholes, noses and toes and the other percent rats and spiders, and used a smaller amount of actual cheese, that thing might have been at least edible in the sense that Taco Bell is edible.

Yes, but the challenge posited to me by a co worker was to use nothing but dollar store food.

I will make up for this by making a real taco bowl this week

Well sure, maybe, but ramen noodles? You can't tell me the dollar store didn't at least have some Doritos.

Also there's not much that could've redeemed those sad meat glue patties, but I think thawing them and crumbling them up into smaller bits before frying would've helped them a little. At least then it'd mix in a little better and you wouldn't have big chewy dog food chunks in your taco salad.

They did not have doritos :( The only things they had were regular chips, pork rinds, and spicy cheese balls. The ramen was a good neutral choice for a base/filler. I was also considering using the jambalaya rice they had. I could always revisit this recipe at some point in the future.

Just be glad that I didn't use the dollar store sour cream.
 
Cooked a ham steak for yesterday's breakfast along with my roasted potatoes. I just cooked the former in a bit of butter and added salt and pepper to it. It came out pretty good given it was a quick attempt I did entirely due to a meeting I was going to run late for otherwise.

Pulled pork.

About 3 pounds of pork loin, a green bell pepper, two jalapeno peppers, some BBQ sauce, a few dashes of white vinegar, some Worcestershire sauce, a few shakes of a spicy pepper blend, and a few other assorted spices.

As soon as the liquid cooks down a little bit more, it'll be time to eat.

edit: well, it was nowhere even close to hot enough, but that's nothing that a little more of the world's hottest peppers can't fix.

Roast potatoes for breakfast. That's a winner right there.
 
rhubarb finally showed up in my supermarket so I made a strawberry rhubarb pie from scratch.

it was fucking good.

i dont think pie dough is difficult to make at all. I dont know why people seem to like the store bought kind so much.

I cook almost every nigth because...I don't know I'm a white woman whose mother had her cooking dinners at fourteen? I was raised to be very frugal. I only do homemade lunches too.

I generally make smaller meals for myself, my husband and our boarder.

Sunday: Sushi. Just salmon rolls and shrimp sushi because my husband is picky about the raw stuff.

Monday: Balsamic chicken stuffed with mozzarella, mushrooms, and cherry tomatoes with rice for the side.

Tuesday: Baked ziti and mushrooms

Wendesday: Re-heated homemade mac and cheese with broiled chicken to make the portion sizes a bit bigger.

Thursday: Lasagna, traditional, just tomato sauce, noodles and cheese.

This has been a heavy carb week but this is because I'm dwindling on supplies and carbs are cheap. When I have more supplies I do more meat and vegetable dishes.
