What Have You Cooked Recently?

My last dish was a mistake. I felt like fried rice and made it in the bacon grease left over from frying pork chops earlier. That wasn't the problem. Then I mixed in finely chopped celery and carrots, finishing with garlic, more slightly overdone bacon, crumbled, eggs, and then the mistake: tamari, fish sauce, and douban (the mapo tofu ingredient).

The mistake was all three which kicked it over into Scalfani levels of sodium. It was still tasty but I could practically feel my arteries clogging and felt vaguely shitty the rest of the day.
 
I’m grilling for a party today. Hot dogs/sausages, 2 boudin stuffed bacon wrapped pork tenderloins. Bacon wrapped stuffed jalapeños, bacon wrapped shrimp, plus dip for chips, relish tray, fruit tray, stuff on the side.

I really just want to grill.

It's a sweet and slightly spicy pineapple, apple and curry sauce.

I topped it with Parsley I grew and dried myself.

Hm, that's a very impressive dish to prepare while on the run from the farms...keffals.

Although more on topic I made spaghetti squash and broccoli/okra yesterday, chicken breasts are marinating in honey balsamic right now, I'll be making those along with stewed tomatoes in a couple hours.
Idk about anyone else, but I'm mostly always cooking for myself so it feels like a waste and/or like I'm a fatass if I get too fancy.

so i follow this gamer on youtube, because i have no social life whatsoever, but recently, he posted a video of some lady making chicken with a doritos breading, and i tried it..and it wasnt bad at all, even though i still say doritos smell like sweaty armpits and feet. i like my original recipe better though, which is chicken breaded with bread crumbs and a shitload of seasonings and cayenne pepper.

I've tried similar breaded chicken recipes made with potato chips; the chips don't really stick well and they come out mushy. Are these cooked in the oven like the crap I had or is it deep fried? Maybe they weren't crushed well enough...

so what i do is make a flour/panko/seasoning mix, and set it aside, and then mix egg/milk/seasonings together in a bowl, right?? then i get a cast iron skillet nice and hot with some sort of fat..and i take the chicken and i dip it in the flour, then the egg, and then back in the flour, and i fry until brown on both sides, and then i put it all in the oven to finish cooking, and 99 percent of the time, it comes out perfect!

I meant the one with Doritos. Using potato chips is a soggy mess unless you cook the hell out of the potato chips to the point where the chicken is overcooked, but breadcrumbs and such work fine. I like using crushed walnuts on my chicken instead of panko. It's good shit - there used to be a restaurant around here that made chicken like that so I wanted to try it out myself. You can use other nuts like almond and hazelnut, but walnut works the best imo.

that sounds amazing, ive never tried using nuts before, will definitely be trying this...! the price of a decent beef roast is so crazy right now, so ive been buying more chicken, and it gets a bit stale after a while

Potato chips are way too greasy. Crushed saltines are really good though, that's the basis of the Midwestern classic the breaded tenderloin.

I'm doing the poolish method for a pizza crust, San Marzanos (from a can) for the sauce, and nothing but mozzarella (store bought) and Italian sausage for toppings. It's going to be in a cast iron skillet.

What I do from time to time is grate a hard cheese(think parm, pecorino) and press it into the meat while it's still moist. Let it sit for a while to dry out and it will stick decently. Fry it in a pan and it will get a nice gratinated cheese crust with a strong flavor that goes well with something more neutral like a simple cream sauce, boiled potatoes and maybe broccoli. You can mix some herbs (and spices of course) into the cheese but I would recommend only using dried herbs. Do the same with bread for ultra-crispy sandwiches.

I made pytt-i-panna which is one of my favorites. Dice raw potatoes or slice boiled ones, fry until they start to have a crisp(or just until cooked if you don't want it that greasy) while chopping up whatever you have left laying around at the end of the week. Raw onion of course, couple of meatballs, piece of sausage, ham, bit of bacon, the butt of a roast. Mix in with the taters and let it fry, turn it from time to time. If using boiled potatoes, take them out of the pan and add them towards the end, they tend to fall apart when mixing everything in the pan. The proportions should be at least two thirds potatoes and one third meats. It can get salty very fast otherwise.

Fry an egg or two, put it on top, add some sweet-sour pickled beets on the side and relive the memories of the past weeks food.
 
I made the pizza and for once I should have actually taken a picture. The poolish method (using the Vito Iacopelli technique) takes a little more work but the results are well worth it. I combined it with Adam Ragusea's skillet method and ended up with a crust with those awesome bubbles on it and a toothy crust, which was actually difficult to cut without scissors.
 
Not sure this counts as cooking but deconstructed nachos. I take half an avocado cut it up and if I feel fancy mash it up, put some refried beans in the same bowl and then dip the nacho chip into the refried beans and put some avocado on top and eat it. Of late I cannot even be asked to cook.

I failed again at making mozzarella. I am giving up and buying a PH reader for this because apparently it is way too acidic and making dry, crumbly cheese. I am literally following the recipe to the letter, zzz. This time I wasted $8 of Guernsey raw milk, so I am particularly pissed. It still melted ok on my pizza and my chickens and cats were more than happy to eat the scraps, but holy shit, I need to get this straight what I am doing wrong. I just want a good mozzarella ball, ok?
 
I decided to make some Greek yogurt after constantly getting sticker shock from the Cabot stuff at the store. I used the dregs of that yogurt to innoculate a quart of pasturized milk and the results so far are promising. A tight curd and whey separation after being held at 110°F for eight hours. The smell is correct and I have to imagine that the taste isn't too far behind. It's currently sitting in the fridge for an overnight cool down so I can strain it tomorrow. I'll probably also make some ricotta and baked goods from the whey when I strain the yogurt, but we'll see about that in the morning.
