What Have You Cooked Recently?

Could you post a recipe please? Curious about trying this.
Sure thing. I modified some recipe I found online.

If you work with unprepped pumpkin, you need to roast it first, without adding anything at all, then blend it or mash it with a fork, depending on how mushy it is. If you use canned, pick the unflavoured kind.
In a pot, put a bit of oil and maybe like 4-6 oz of bacon chopped really small. I just eyeball it, do as much as you want. Fry it, then add a small onion, chopped (or a half if it's a big one), then about 2-3 cloves of garlic either chopped or through a garlic press. Once those are sauteed, add about 9 oz of the pumpkin puree. Pour in a good 4 1/2 cups of chicken stock. Throw in a bit of ginger, nutmeg, some basil, cayenne and black pepper. Depending on how salty your stock is, you may need some more salt, because the pumpkin can be pretty sweet. Bring this "soup" to a boil, then add 14 oz of pasta, I usually go for elbow or fusilli. Make it boil very gently, stir once in a while. The pasta gets cooked in the pumpkin soup. Once it's almost done and the sauce is thick, add either mozzarella (I did about 7 ounces last time) or cream cheese ( I would add less) and stir until combined. Mozzarella makes it feel more like a spicy mac and cheese, the cream cheese makes it more... creamy and saucy I guess.

So yeah, it's a one pot recipe, which is good. I also think the spicy works very well with the sweet.

I usually get about halfway through cooking the meat and boiling the potatoes before I go "fuck this I want a giant pile of meat and potatoes and don't care about some fancy casserole shits" like my aborted attempts at quiche that became "breakfast snacks"
Shepherds pie with gratin on top of the potatoes is top though.

been messing around with doing them at home
I like traditional kraut and onions and stuff, but pickle/tomato/etc is nice.
the mix seems to go better with beer then more plain dogs
