What Have You Cooked Recently?

I made this for a brunch so its bigger than normal but I make something like this for breakfast often and Ive gotten good at getting the egg shape right, you gotta shape it with a spatula right after dropping it into a hot pan.
Im comin for you McGriddle. Its bacon, wilted spinach, cheese and egg but this one also has sausage.

Beef and barley soup, my own craving so I imposed it on my whole family. They didn't seem upset :)
Vietnamese soft summer rolls with mostly veg and a few thin slices of lemongrass charred beef. Had some left from the piece I got for the soup so I thought I'd use it up.
Will not be cooking over the next few days, visiting family. :)

I do something similar with english muffins. I am toasting them in butter, which ups the flavor tremendously.

The last thing I made was a bagel with cream cheese.
 
I was feeling lazy tonight, so I threw some cabbage and corned beef in the oven mixed with cream of mushroom soup. What I ended up with was a horrid abomination that is the bastard child of Kay and Jack Scalfani. I tried to "fix" it by browning up some hash browns and using it as a base for the slop. It didn't work.

I made black sesame pudding based on the recipe from Cooking with Dog. It was good, but a bit runny. I might need to get a new scale since the only thing my piece of trash can measure properly is small packages for mailing, and it can't measure fractions of a gram.

No, it's not a package scale - it's too small for that. It's meant for weighing larger ingredients.

I had some leftover Chinese food (fried rice, chop suey) and some eggs that had to be used.

I tried to make an Egg Foo Yung improvisation by frying everything together on the stove.

I feel like I didn't get the egg ratio right. In my mind's eye, I was going for fried rice with egg, but it turned out more like a messy Chinese omelet.

Yea sometimes you're just not feeling it and want a meal with a minimum of effort. It would have been 100% better if I simply sauteed the cabbage on the stove top and just added some spices to add some kick. I relied on the oven and cream of mushroom soup to do too much of the job and ended up with a soggy, flavorless mess that resembles shit on a shingle. Oh well. Live and learn.
 
I made some Chapli kebabs and they turned out okay despite having to substitute some ingredients. I had them with turmeric rice, ancient grains, and chai tea latte. I feel like a total Chad although the prep was a bit of a pain in the ass. I definitely have a thing for Pakistani food, it's richer and heavier than their Indian neighbors although some similarities exist. I like a little heat in my curry too so if my head isn't sweating it's not hot enough.
 
My stomach was not having it today so I made mashed potato and gravy. Gravy made from the dog ends of vegetables I had and the chicken bones from the week and reduced significantly till the stock was a solid jelly when cold.

The collagen from the bones is very good for guts. And mashed potato is just a hug in potato form.
 
Currently making corn bread for tonight's dinner, southern eggs benedict thing I made up.
Cornbread
Bacon
Poached egg
Jalapeño hollandaise
Grilled onion.

I have fresh caught mackerel and rockfish. Does anyone know any good recipes?
Sorry you didn't get an answer earlier. I like my mackerel just grilled with some lemon, maybe basted with soy sauce as it cooks and served with grating daikon if I'm feeling like japanese.. Rockfish I usually get when I'm island camping and I pair it with a mango habenero salsa on corn tortillas.

lmfao nevermind I offered to make brisket tacos for everyone tonight and we were invited to meet friends' new baby so I'm also going to wake up early tomorrow to make japchae to take to them since that was their request. So much for my weekend of no cooking reeeeeeeeeee!
