What Have You Cooked Recently?

Slow cooked pulled pork: I'm trying to figure out a lazy way to make this shit without having to cut up a pork shoulder - since apparently people don't sell boneless pork roasts anymore (also I'm running out of room on my freezers somehow), stew meat comes closest but it's literally twice the cost.
I just bought two and a half pounds of boneless pork shoulder as "pork shoulder steak." Try finding a custom meat place, the kind of place that will cut up a deer or whatever for you, and ask them for it. I'm going to sous vide it for a couple days.

My rub:
2 tablespoons bourbon smoked paprika
1 tablespoon bourbon smoked sugar
1 tablespoon freshly ground cumin
1/2 tablespoon street taco seasoning
1/2 teaspoon salt

And a half-teaspoon of Stubb's liquid smoke. Yeah, I know, blasphemy, blow me. I may be a YT but I seasons me food.

I'll decide some time on Saturday if I want to do a glaze or just rip it apart with forks and add Stubb's bourbon BBQ to it.

I know the subject line is "cooked" as in past tense, but this sous vide shit is pretty awesome. You're pretty much done once you start it and it's just a matter of waiting, no need even to pay attention.

Also I'm going to eat it on brioche hamburger buns, maybe with a bit of cole slow and chopped onions and ghost sauce.

I like hawaiian rolls because I can just portion all of it en masse instead of each bun.
Also the restaurant near me does this thing where they put cole slaw ON TOP of the pulled pork in the sandwich. Idk how it works though since it gets way too ssoggy when i try it.


*OHH RIGHT! Forgot to add there's also a thing I remember seeing "pig chips/fries:" Essentially they put bbq pulled pork, green onions, and cheddar cheese on either restaurant made chips or fries - both dusted with cheese powder dusted on it. It was fucking awesome. No, no storebought chips could compare.

I'm going to be making meatballs this weekend so I will probably have some of that with it.
 
Had said beef stew for 3 days in a row- the first night, we had it by itself with homemade bread, the second night, we had it with a green salad, and the third night, I made more homemade bread with tomato and garlic confit.
Tonight, I'm making pan-seared NY Strips with steamed yu choy and duck fat potatoes. I've gotten really great at getting a perfect crust on pan-fried steaks and I consistently churn them out as rare or medium-rare depending on who I'm cooking for- beef is prohibitively expensive where I'm from so I hadn't made many steaks before moving here.
Kids are going to my in-laws' tomorrow, so we're either going to go on a dinner date or I'll make something I don't often have the opportunity to cook.
 
My sister came to visit, the focaccia survived less than 24 hours so we decided to have lasagna al Forno for dinner instead. I used Gordon Ramsay’s recipe.

I also baked some cookies, I usually like to use big chocolatey chunks mixed through the dough but didn’t have any so I just put some m&ms I had on top. The cookies spread in the oven so they look a little mean but they tasted nice.

Roasting cherry tomatoes with olive oil and spices (garlic, onion, salt, red pepper flakes), to have with fresh mozzarella and I'll make a balsamic glaze later. Will probably eat throughout the week with sandwiches, steak, bread or whatever. Trying to get out of snacking-only mode, so I thought it would be a good transition back into cooking.

Next time get hawaiian rolls, bacon, and crispy onion bits, cook the hotdog wrapped in bacon. If you're a lazy fucker you could even microwave that shit.

There's also making a hotpot using spice satchets from spicy ramen, then turning the noodles into dry spicy noodles. Grilled cheese + tomato soup. and poptarts
