What Have You Cooked Recently?

I made chicken Alfredo. Honestly been wanting to try out recipes, but I need to empty my freezer.

Baked blackened tilapia, asparagus seasoned with Jamaican Jerk seasoning, and served with sushi rice. The Sushi rice was a request and the sweetness went surprisingly well with the contrast of the spice of the fish and asparagus.
Tilapia is worthless. You are better off eating Tyson chicken.
 
Money has been pretty tight lately so I've been buying spam to cook cheap meals for my family. Don't get me wrong, spam tastes like shit, but I simply figured out how to make it not taste like spam.

Today I tried making spam tacos.

First I sliced the spam up and soaked it in water for 30 minutes to get rid of some of the saltiness. I put a light amount of taco seasoning on the spam. After that I melted some butter into a cast iron pan and I put the spam in the pan with diced onion.
Then I put the pan into the oven and baked it at 250 degrees.

After an hour the spam starts to get really tender and the onion is caramelized. I took it out and put it on the stove at a low temperature, added a tiny bit more butter, some minced garlic, and I shredded the spam with a fork. After about 5 minutes, I poured in a can of El Pato tomato sauce, stirred it around really well, and then I let it simmer for another 30 minutes while stirring occasionally.

It came out really good and you honestly couldn't even tell it was made out of spam. One can was able to feed 6 people.

Spam is delicious if used correctly. Although it's really not a cheap protein. Chicken legs are usually cheaper. Those tacos look decent.

Spam is only $3-$5 depending on where you buy it, all the ingredients together were probably ~$10-$15 and it fed my whole family so I'd say its pretty good for when you are on a budget.

I don't know where to buy chicken legs and I don't want to cut legs off the chickens I have but I'll be sure to look into it. I bet you could make a decent stew with chicken legs.

Also, Quail is really cheap meat. If you invest in a few birds and a big cage, they fuck like rabbits so you'll have plenty of homegrown meat within a few months. Its decently cheap in the longterm. I got like 20 quail in the freezer, gonna make soup with them sometime soon.

Busy time of the year so I've been forgetting about most of my personal treat threads like this one and the Wordle one, but not much has been missed tbh- I haven't been trying out new recipes or techniques at all, just making more of the tried and true family favorites. Pork chops with roasted veg and a salad, which btw the youngest has finally started being into salads, NY strips or ribeyes with potatoes and salad, saag paneer, chicken or lamb vindaloo, thai curries of all varieties, you've read it from me before, literally nothing new.

Today I made street-style tacos with my homemade salsa and the marinade I created after eating enough of them to feel confident enough in replicating it, tomorrow I will be making NY strips with duck fat potatoes and a greek salad bc I, once again, am over meat, and Sunday I will be going along with whatever wonderful plan my husband has concocted for me so I will not be cooking.

That looks nice. If you wanted to vary it a little, depending on your budget, you could try different meats and refried beans. You could also fancy it up a little by rolling them up, putting a little sauce and cheese on top, and microwaving them to melt the cheese on.

You know what? I am a genuine drooling fucking retard and for some reason I was thinking about the chickens foot.
Seriously, I am almost angry at myself. Why? Why did I read chicken leg and think about the chicken foot? Ffs, I am a retard, I now suspect I may have holes in my brain, and I deserve all of the mockery I get over this.

The real secret is that chicken drums make the best soup.
Yup the more bone collagen and fat the better the flavor. I use a whole chicken myself.

Quail eggs are also a good choice for making pickled eggs. They're nice to have on hand for some dishes and for making appetizers. Especially if you like really intense pickled egg flavor cause those things can get pretty strong after awhile. Makes a good pairing with savory fatty meat or a particularly rich cheese though

That said I made some homemade liver pate last night. Nothing too complicated. Just soaked the cow liver for several hours in milk to get rid of the strong iron taste, cooked the liver, some maple cured bacon and some smoked pork belly with onions. Then threw all that in the blender with lard, rosemary, summer savory, salt, pepper, sage, dill and some garlic to blend and stored it in canning jars

Turned out really well and has the dog eyeing me closely every time she sees the jar its in. She knows liver and pork got cooked up and wants her cut
 
Spam musubi is amazing. A friend of mine who grew up in Hawaii makes theirs with egg, I have only prepared it with spam and rice but there are a lot of variations sold in Oahu that I want to try

Caramelizong some onions in the slow cooker for supper. Not sure if I'll make onion soup or have them with pork chops yet
