What Have You Cooked Recently?

Failed at making toffee. Toffee's being my bane for a while now. I can make caramel syrup and sauces no problem, but the toffee is walling me. End up being a little better than the last time with no molten sugar burns, but's not holding structure. I wanted it to be firm and chewy, but it melts at room temperature. From what i've gathered, i think i didn't cook long enough. Still very tasty though, i'll figure out what i'll do with my failtoffee.

Oh, and i made rice for lunch.

Fried eggplant slices with grated cheese, garlic, dill and mayo stuffing. Yum, but probably a week's worth of normal oil/fat consumption. AUGH YEAH
 
made chorizo stew again which was really nice. I'm gonna try adding a carrot and chicken broth it next time I make it. Will blend it and see if it works as a soup.

If you like toffee/caramel style things, you should try making scottish tablet.
 
This is pretty simple cooking, but I made air fryer wings for the super bowl.

I went with frozen wings, didn't bother to defrost. Put them through one cycle frozen, 400f for 6 minutes.

Then patted them dry, added some baking powder (supposed to improve crisping) and seasoning salt.

Then another 6 minutes at 400f.

Then I tossed them in like 1/3rd a stick of butter melted with some hot sauce.

And then about 9 more minutes in the air fryer.

Came out pretty good:

Blue cheese dressing. I think I got like Ken's or one of the nicer grocery store dressings. Maybe one of these days I'll dig up a blue cheese dressing recipe and do it myself.

Beer and wings and football, can't go wrong.

I’ve never made salsa before and I wanna try. This evening I got two bags of these mini tomatillos because they were out of the regular ones. I have cilantro, a few large raw jalapeños, a bag of Roma tomatoes, onions, garlic and limes. I’m excited lol I saw a few reels on boomer book about how to make it and got inspired. Any salsa connoisseurs? I’m making it tomorrow.
 
I made chili cheese dogs last night, I haven't them in a while and I felt a hankerin' for 'em

I ended up using some beef, a premixed seasoning mix, cheapo Tailgater buns (because all of the good ones were bought up due to the Super Bowl), some brioche hot dogbuns, a mix of 1/4 pound and bun length Hebrew National dogs. I stupidly bought some seasoned fries so I had to make due with older, possibly freezer-burnt fries as a side.
 
The salsa adventure went better than expected. It’s pretty thick but I’m here for it, I added some better than bullion chicken flavor instead of salt, no other seasonings. I can’t believe I made this lol it tastes good and it was minimal effort honestly. I didn’t have high expectations but this is encouraging, it’ll be fun to tweak it and make different kinds.

Cooking wine can last years after opening, so no need to waste it. It's nearly undrinkable.
I just bought a white and red cooking wine at Walmart to have in the pantry, I’ve never cooked with wine before but I’m excited to try. I recently went through a buy all the vinegars phase and I’ve had fun experimenting with them.

Homemade salsa is a big upgrade. I really like some of the recipes in this book.
 
I made these crazy keto wraps. They're on these tortillas that have 22g of carbs but 20 of those are fiber so 2 net carbs per tortilla. Ground beef, shredded cheese, a bit of bacon, and some hotsauce, cooked in the air fryer. Depending on your source of ingredients, it's about 2-4g of carbs per wrap. Filling as well. You can't even really tell the difference from a regular wrap. Good shit. Good for keto.

How did this taste and what kind of cheese did you use? I've never seen cheese in bread, only on top of it. Very curious about this.

I tried @Bronze Age Baddie's quinoa meatloaf recipe, but followed it exactly from the website. The better call was definitely seasoning it yourself, as when I put the salt and pepper called for in the bowl I could tell it was far too much. Texture and quinoa flavor came out great though! Definitely going to tweak it and maybe try it with BBQ sauce if I can find one that meets my friend's non-gluten issues. The recipe also said to shape it into a loaf on a lined baking sheet and the shape ended up kind of sad, so loaf pan next time as well. Turns out I thought I didn't like quinoa because I was confusing it with another grain that I find absolutely disgusting.

I've also got some dough going for some more bread experiments of my own today, as well as some plans for chicken and roast broccoli later. I've never made fresh broccoli florets before, does anyone have any suggestions for what I can use the stem for that'd be good? Do I just throw it in my stock bag?
