What Have You Cooked Recently?

Does your meatloaf hold together without a binder (ie eggs)? You mentioned a gluten allergy in the thread, I've had amazing results with quinoa in lieu of bread crumbs.
I'll keep quinoa in mind if I end up with some floating around

They bind okay but nothing amazing, but my mom never used egg so I'm not that hyped about if it holds together so much or not.

Sorta counts as cooking: I took those horrible Whiskey Bourbon Bacon sausages I recently got from Aldi that were fucking awful, chopped it up, drowned it in salsa, microwaved it in ceramics with a cover to heat it, and it wasn't too awful with beer.
 
I've recently cut dairy out of my diet and it's actually pretty fun finding interesting alternatives to eggs and milk (aside from the overpriced vegan crap you can buy that tastes like an armpit) I made chocolate and coconut tarts with berry dango filling today, using rice vinegar and a splash of sake with baking powder instead of eggs, and coconut oil with margarine instead of butter. The tart pastry came out quite solid, so it didn't absorb too much of the berry juice and go soggy.

Burned my tongue on a molten blueberry, but it was totally worth it.
 
I'm trying to get myself more comfortable with cooking more involved recipes/things with more steps. I only just started recently, so I am still mostly doing simple stuff, but I am working at it and learning. For dinner I made myself a "sausage melt", I guess. Like a grilled cheese, but I put a sausage in the middle. It was originally a sausage link, but I cut it open so it was wider and flatter. Cooked it on the stove. And I melted a slice of mozzarella cheese on one piece of wheat bread and a slice of Colby-Jack on the other, and put a little mayonnaise on both slices.

Turned out pretty good for how simple it was. I just should have waited for the bread to cook a little more since it was a tiny bit soggy rather than browned at all. I was just impatient and ready to eat.
 
Pack of chicken thighs with bone and skin.
Rinse them and get water under the skin to loosen it, flop them in a baking dish.
Drain off whatever excess water.

Season the underside with salt, parsley, sage, thyme, and rosemary.
Flip them over, pull the skin back, everything except the salt on the meat.
Put the skin back in place, salt on the skin.
In at 375 for 40m. Flip it so it's skin down for another twenty, flip it back up for another twenty.

Turned out good as usual.
 
I made some dinner rolls in my new cast iron pan. Hot damn they were gooooood! They looked like a beautiful carby flower and were so light and fluffy and buttery.

I mentioned this in another thread, but the day before yesterday I grilled some bacon cheeseburgers using fresh ground beef, turkey bacon, and cheddar cheese, served on generic store brand hamburger buns, with potato chips as a side and paired with Pepsi and Dr. Pepper.

I decided to cook dinner for myself, my brother, and my friend, and it turned out surprisingly good, especially considering I don't cook much and had never made homemade burgers before.

I might do something similar for breakfast, as I know how to bake biscuits from scratch. It's one of the few things I know how to cook.

For dinner tonight i made a sweet potato and butternut soup. Equal parts sweet potato and butternut, and then leek, garlic, ginger, and creme fraiche. Salt and pepper, paprika, and thyme for seasoning. Water and vegetable stock. Really good and filling together with toasted bread.
 
Couple days ago, I made some sloppy Joe's after doing a bit of grocery shopping. No regrets eating a couple of them since they turned out pretty good.
 
Super simple curry and steamed rice. The curry was literally just throwing cubed potatoes and onions into a covered saucepan with oil, then adding spices, shaking it around for a bit, then transferring to a frying pan to avoid sticking. Very dry but tastes great depending on how good you are with mixing spices (my second time making this, I added like three times as much cumin and it was horrible). Served on the rice, with naan bread and mango chutney.
Everyone liked it, now I feel validated as a human being.
 
I made some veggie chili while I baked cornbread in the cast iron pan. The chili didn't thicken up quite the way it was supposed to so it was like a hearty minestrone but it was really fucking good and I am going to eat it again tonight. And go to bed five pounds heavier.

Aw yeah, chili can be incredible with or without meat. I like to add a mixture of spelt flour and cornflour to mine in case I feel it's a bit more runny than desired. It's probably not the most authentic thing in the world, but I like to add some ground ginger to it as well, it really gives it a nice combination of bite and freshness. Oh, and cumin! Can't forget about some cumin.

The guacamole in the fridge hit sell-by yesterday.
Tasted okay.
Brioche bread, mild shredded cheddar, sauerkraut, guac, a bit of fajita seasoning, butter on both sides for grease.

Really good.

Made some chicken and chinese veggies stir fried in soy sauce. Was pretty good, chicken was very juicy.

I made a fall casserole. The main ingredients were: lightly seasoned chicken thighs roasted 30m @ 425F then cut, mixed squash also roasted, kale - sauteed, pasta, pumpkin soup from Trader Joe's, lots of chedder cheese on top, breadcrumbs, and on a whim I diced half an apple and put that on top too.

It turned out pretty good. If I make it again - the bread crumbs didnt really add much so Id skip them, they are really good on some casseroles though. The apples would have been better mixed in, like I said it was a whim so they got put on top but they were a smart addition. Dried cranberries or even just raisins would also be good.
I would also make a lot less, because it lost flavor in the fridge FAST. The first day it was great but I made a big pan, by like the second or third day it was just bland.

I also made jalapeno poppers. I signed up for this CSA box (you know where you get a box of random vegetables and fruits from a farmer every week or so) and they gave me a bag of jalapenos. I didn't have cream cheese, and I wanted to use up stuff in the fridge, so I cubed cheddar cheese and mixed it with enough mayo to coat it kind of thick. Then I filled the halves and sprinkled bread crumbs on top. They were awesome! I'd never made them before and I was glad my made up recipe worked.

ALSO, I made carrot "noodles." Again, from the CSA box. I like carrots raw, but I generally hate cooked carrots. However I had a bunch of carrots from the box like way too many to eat raw so I decided to try spiralizing them, then sauteed them with butter and salt. Threw in a couple of spiralized radishes because again they came from the box.
HOLY SHIT. They were the best cooked carrots I've ever had, including ones from fancy ass restaurants that serve the tiny multicolored ones with just a little bit of the top left on. No sauce or anything, I didn't even add garlic. So. Good.

I'd like to start making some curries. If anyone has any recommendations for curry pastes or other stuff that would be great! I made one yesterday but it was with a "curry broth" I picked up for cheap, I can do much better.

Got some cheap instant chicken noodles, then unfucked them by pouring away 2/3 of the broth, then adding coconut milk, soy sauce, sriracha sauce, fish sauce, sesame seeds, sesame oil and a chopped spring onion.
Was fucking good for taking all of 3 minutes to prepare.

Made mushroom beef with butter and cream-mashed potatoes, and green pepper sauce yesterday. Im having it tonight too because everything is better the day after. Seasoned with my salty tears because its that good
 
I just made french toast as its late and i didn't want to get takeout. Twas glorious.
