What Have You Cooked Recently?

Zucchini noodles with tomatoes/garlic/olive oil and chicken meatballs. Looks horrible though.

A family friend had spare Pennsylvania crook neck squash. They’re butternut squash but boy are they fun. Been making soup or roasting them with brown sugar and cinnamon. tomorrow night is casserole with cheese and rice.

Zucchini noodles are the shit. I may prefer them to regular noodles. And any time I make them for people it's a big hit.


I tried making ravioli a couple weeks ago, but the first attempt was a semi fail; I made my own dough although I don't have a lot of experience and possibly let it get too dry, I had a really tough time rolling it thin enough. So the dough ended up really really thick. They were edible, but very doughy.

This time I bought pre-made egg roll wrappers. The filling is roasted delicata squash, that was then added to onions softened in butter and spooned on to the wrappers. These are great! I can't wait to make more and try different fillings.
 
Just finished making an olive and feta bread with oregano.

I'm having trouble with the recipe, it's coming out fine but the crust isn't as crunchy as I want and it's very dense. Flavor is good though.
 
I'm making mince pies for the first time this year, with my Mum's recipe. I spent £20 on ingredients and made a fuckton of mincemeat, but my flat smells incredible.

Want something sweet, but have to improvise.

Chocolate syrup like for on top of ice cream, on top of raisins. Whipped cream on top of that.

Not bad at all.
 
I'm doing enchiladas for thanksgiving because fuck yes. I like them with a nice tangy tomatillo sauce.

I recently made chicken fried steak for the first time. The gravy was delicious but I overcooked the meat. I was worried that I was going to undercook it and didn't want to eat really cheap-o meat rare, but consiering how the meat was so thin I probably didn't need to worry so much.
 
I made duck l'orange today, as well as a butternut squash and kale quiche.

I probably won't ever make the duck again, not worth the effort. Quiche was alright.

Out getting groceries for old neighbor lady. Get some nice-ish hot dogs with intent to boil them in water with kraut. Old lady gave me produce including some "sell by a couple of days ago" veggie kebabs. So I sliced up the onions, peppers, and mushrooms from the kebabs and threw them in the water to boil to get rid of any aids.

Looking forward to seeing how giant pile of veggies and shit guest-starring hot dogs turns out.

UPDATE

Not bad but I forgot to dump the water out so the veggies got kinda yucky by the third hot dog.

It is now the deepest of winter here. The kind of weather where you go outside and can't help but mumble "fuck it's cold" under your breath.

This is when I break out all of my warm and hearty cream-sauce based food in an attempt to make life suck less. They all start with melting a half stick butter, adding flour and milk, then all the stuff I like. I outdid myself the other night with a baked potato soup. I saw one of those 3 lb sacks of ends and pieces bacon and went "hmmmm". I cooked it up with some onion and carrots then added it and boiled potato to my cream sauce that I had slowly melted a bunch of sharp cheddar cheese and cream cheese into.

It most definitely did not suck.
 
Baked chicken coated with honey BBQ sauce, asparagus, Spanish rice with saffron and bell peppers, refried beans, corn on the cob, and salad with extra ranch spiced with cracked black pepper corn.

Despite the smelly farts and urine, the meal was very tasty. And for those that don't know, asparagus makes your urine smell bad and I can eat a whole pack by myself. So deliciously crispy and burnt!
 
have a few burger buns to get through
cut a can of spam into two thick square slices
cook some onions and precooked bacon from the freezer with the patties
add some velveeta for the cheese

Burgers I cooked with a seasoned butter concoction, some regular bread I lightly toasted, crispy crowns.

I think the patties weren't of the prime selection I thought they were, they shrunk a bit but were still edible.
 
I make soup several times a week, this week I made-
Potato/carrot garam marsala with chicken and egg noodles.
Potato/bacon/pea soup w/ nutmeg and egg noodles.
Potato/mixed veggie chicken noodle.
All pretty good, cant really go wrong with soup though i just use the same base and add different extra shit everytime.

I've been messing around with making miso out of dashi. I have a bag of bonito flakes coming from Grorious Nippon because I can't find them anywhere nearby.
 
Ironically I don't like vegetables, like, at all unless they're hidden in sauces.
But I'm very good at cooking them from what people have told me. I made pan seared garlic butter and thyme filet mignon with a side of sauteed spinach. And apparently the spinach was really good??
