What Have You Cooked Recently?

I made my famous fried rice tonight. I like to cook and am a decent one but cooking is something I'm no joke humble about, but I take pride in my fried rice. I gave some to my friend and after she ate some she called me and just thanked me. Warmed my heart.

I don't do any crazy tricks or anything, I just use more egg than you think you should.

The last thing I cooked was quesadillas, for myself. That shit is just so damn easy to make.

Step 1: Place tortilla on the pan
Step 2: Bury it in cheese
Step 3: Add Extra Shit
Step 4: Fold
Step 5: Cook
Step 6 Guzzle

I do it like I do my grilled cheese. First, I put a bit of butter in the pan and melt it, and lightly toast the bread/tortilla on one side, enough to heat it up. That will be the inside. Then I put the cheese on the inside, and butter it on both sides. By this time the pan/skillet will be nice and hot. The cheese will immediately start melting even before you put it in. I flip it and then within about a minute or two it's done.

With a quesadilla I usually add a few jalapeno peppers, sometimes taco meat, usually chicken. Or just cheese.

For either one, I like it slightly toasted on the inside too.

I've grown fond of taking one large or two medium/small potatoes, cutting them into bite sized pieces, tossing them about in a seasoning mix and oil (seasoning mix I tend to love using are salt, pepper, garlic powder, cayenne pepper), and then air frying them for 20-30 minutes. Great
'fuck it' side dish.

Is there a cheap but good air fryer? What do you use?

Don't know the brand-name personally. I just know it looks like a 100 buck model we got for 40 because we got the store to apologise by giving us a discount for selling us a defective but cheaper model last year.

If you have a convection oven, you don't need one, but we find it's super nice and much less bothersome than an oil fryer.

Small can of mushrooms, shredded parm cheese, minced garlic in olive oil, some dried tomatoes, dumped that on some noodles. Not bad but the cheese clumped up some.

I've been wondering if the cheaper ones are just as good as the expensive ones, because I bought a Tefal Actifry and it's only "Eh".

I made Okonomiyaki and Daifuku the other day, for Lunar New Year. I made several types of Daifuku - strawberry, matcha and red bean as well as icecream mochi. I haven't had time to cook properly since and I forgot how much I love making Daifuku. I wanted to make Patbingsu because it was hot, but seriously, it's hard to freeze lots of ice when it's a heatwave. Sydney needs more power stations so it can handle my ice freezing needs, instead of gyping me of power.

Okonomiyaki is always so good though. I think I'm perfecting the art.

So I decided to make burgers for myself and my wife because she needed comfort food after a shitty day. I made the buns, the patties and the sauce, the bacon and cheese is sourced locally from producers I personally know and the onion is from last years crop ion my garden but as lettuce is out of season I did have to buy that. All in all though:

I probably used a little too much cheese on mine but god damn they were good.

Tonight's selection is a sushi burrito, fillings are avocado, pan fried asparagus and yam, spicy shelled edamame, rice obviously, and a little teriyaki sauce

Burgers.
Got a nice looking mixed-color pepper and onions so I made it really veggie heavy, with a lot of jalapeno havarti and a little small on the patty.
Revised burger
Diced the pepper and onion. Sauteed with the burger.
Pulled the patty when it was done.
Dumped some jalapeno havarti in the veggie and grease, added some velveeta, made it into a cheese sauce, basically like a cheesesteak.
Very dank

Excuse my messy kitchen there, I got chicken pieces all over the place (after just cleaning it too :( rip)

My teriyaki sauce is fire, all spices and flavors and chili oil, the rest is just chicken bits and veggies (red pepper flakes and garlic for the chicken, basil and celery salt for the veggies)

Fry them bitches while listening to Devildriver and smoking a huge fuckin blunt and sit there stirring the shit for 30 minutes solid because you’ve smoked yourself retarded

Solid gold, I made some for my coworkers because I lost a bet too
