What Have You Cooked Recently?

Have so much salmon leftover. Decided to make a salmon salad sandwhich with fresh dill, celery, mayonnaise, salt, pepper, and lemon followed with some home aid pickled squash and zucchini I made the other day.
 
made a panini on a George foreman grill. Roasted: portabello, red pepper, eggplant, zucchini, added fresh spinach and tomato, pesto aoli (vegenaise). Put on a nice telera roll and grilled it. Tastes like spring.

I was just thinking that looks really good for a Jack Scalfani dish, then realized I wasn't in that thread. Jack would never make anything without at least three coronaries as ingredients.

Made tapioca cream, same as tapioca pudding, except beating the egg whites with sugar to meringue beforehand and mixing them in again at the end along with the vanilla.
 
I'll have to grab my phone for the picture but since last night was (hopefully) last snow storm of the year.

Sauer Braten Red Cabbage and Spatzel

Made the meat and spatzel at home bought this German brand red cabbage I never have had and it was not as tart as expected but damned good. Had 2 huge plates but I did shovel half the 'hood out myself. Guests all said "Wunderbar!"

I didn't take pictures because I was on a time crunch but for my buddy's 29th birthday on Friday I made a bomb ass carrot cake with freshly made lemon cream cheese frosting. I've made this recipe a handful of times before but it never came out bomb as heck like this

Yall know the basic carrot cake formula, its a cake with carrots and stuff in it. Little secret about me, I absolutely can't stand things that are, shall we say, too sweet, if that makes sense. I prefer my sweets and desserts to have a more rounded, nicer flavor, and as such I often use less sugar for things like cakes and more spices and things like molasses.

Well that's what I did this time, too... little bit of molasses, shredded carrots, flaked coconut, food processed walnuts, crushed pineapple and golden raisins, I know some people don't like raisins but in my opinion they're absolutely vital, especially the goldens.

The frosting was so easy too, cream cheese and butter whipped together on super high in a stand mixer and then dump a bunch of powdered sugar vanilla and lemon juice/zest in it. Definitely more lemon and less sugar this time and the result was just divine, the only cakes I don't scrape the frosting off of are mine, it seems.

I'll remember to take more pictures next time
 
Who else played potato nigger for the day and did some Corned Beef, cabbage and potatoes last night?
Also, mrs Bass informed me I'm not allowed to say potato nigger, esp at the dinner table.

Made two, I think I ate one of the whole damned things myself came out so well. I like to sprinkle some malt vinegar on the cabbage and potatoes and needless to say a good strong mustard for the corned beef, used a good english one last night.
 
Nice... yeah I didn't make anything, I went out, but I did make some of my very best creme brulee on Thursday for a Friday dinner with my girls' family

They were blown away but honestly creme brulee is so easy, i've made it hundreds of times lol

This time I did the standard custard, eggs and heavy cream, but I infused the cream with raw vanilla bean (split and scraped, a pain in the ass but its worth it) and put little bits of fruit in each one before it went into the oven to finish. I used raspberries and blackberries, and I kind of think that the blackberry needs more to accompany it, the raspberry is a crisp tart splash of goodness but the blackberry felt kinda muted. Didn't stop everyone from murdering all 12 of my ramekins tho lol

I took that advice from one of these threads to caramelize both sides of a cheese sandwich and it was the best idea ever and paired off well with my roasted potato bites. My big fuck up is I should've used a smaller pan and didn't quite have enough butter for the second sandwich.

learned from my grand mother how to make traditional beef empanadillas . Shit made me so hype i ate twelve by myself
 
Corned beef hash for breakfast, woke up early so had time to caramelize the onions and all. Paired with a nice cup of coffee. Good way to start the day for sure.

forgot about the bit that didn't fit in the crockpot until tonight
didn't have any bbq sauce

had about half a 2l bottle of Dr Pepper, some sriracha, and some paprika

dumped the rib in that, boiled it for a bit

not as bad as I expected
 
Homemade chili with beef, black beans, red kidney beans, corn, and diced tomatoes. I also add cumin, chili powder, salt and pepper. I also slow cook it in a crock pot for about 6 hours. It's a beginners dish, but I make enough to have leftovers for a few days.

I am one of those meal prep losers. I made chicken breasts, coated in peanut oil, with a dry rub. Baked at 400 for 45 minutes (I overcook chicken a bit, don't want salmonella). Also made Mexican beans and rice with chorizo sausage and pinto beans.

I didn't take pictures, though, because I didn't realize this sub existed until now.

I enjoy cooking. I find it relaxing.
 
Stir fry with various vegetables, ginger and soy sauce.

My dog's original owners didn't give him dog food. So he eats hamburger, chicken, rice, stuff like that. So rather than throw away the meat juice in the pan I use it as a base to make my own food. I only thought of this recently. I had been throwing away perfectly good meat juice and it really makes a difference when cooking veggies. I added lil' meatballs to it that I made with hamburger and it was pretty nice.

I've heard of making soda cake. But I never heard of using it to make barbecue sauce. That's interesting.

I've rarely gotten it above "interesting", so I usually hold off on it except for drowning out the taste of questionable meat that I'm cooking the shit out of.
 
Made some homemade bread for the first time in a long time. My sourdough starter had gotten thrown away so I was like fuck it, I miss it, I dont wanna do bread anymore for a while. So it was just a regular loaf, but it's pretty good.

Fresh bread is one of those things where you kind of see how people scientifically say humans are addicted to wheat products and carbs like that. It sounds ridiculous but it's true. It's why grocery stores put it up by the check out counter.

I got drunk after cutting a tree down by hand and made hot dogs.

Weather was beyond perfect and I sipped some bourbon listening to baseball grilling outside. It's as happy as people get.
