What Have You Cooked Recently?

Meatloaf with bell peppers, onions and mushrooms. I substituted the sausage for pork chorizo to give the loaf a bit of a bite without being too spicy for when I share it at work. I like some of my co-workers and they're broke until payday too.

I'm a broke plebian sometimes so it pays to be able to substitute at a moment's notice and still turn out 9/10.

I made Chicken Parmesan tonight. Chicken breaded in crispy Italian style panko crumbs, baked, then topped with a chunky garden style marinara sauce and a buttload of Parmesan cheese. Served with steamed yellow squash and zucchini, rotini pasta in a tomato basil sauce with mozzarella on top, and a nice Caesar salad with sliced olives and yellow peppers.

Whole thing was friggin' delicious! For dessert I'm gonna make a nice tofu pudding out of some silken tofu I've got, some sugar, eggs, cocoa, peanut butter, and banana pudding mix. It's a really good use for tofu, actually.
 
I made this for my Niece's fifth birthday. She loves Unicorns.
I'm really happy with this, and hope that I can maybe finally start my long wanted business.

Made 0ver 50 tamales today. 8 cups of masa harina, 2 1/2 cups of lard, 4 teaspoons baking powder, 2 teaspoons salt, 5 cups of chicken broth, 3 pounds of chicken, 2 pounds of pork, a can of red sauce and 2 jars of green sauce.
30-something chicken and 20-something pork tamales in total.

Gonna steam 'em and freeze 'em for quick dinners. Might send a few over to my neighbor who helped me with some roof repairs recently, too.

As BigRuler originally said, I am also a poor sodomite and must buy whatever is on sale. This week a whole chicken was less than a dollar a pound, and I prepared it in a very traditional manner. The secret is to use so much butter that it tastes delicious!

Both of those dishes look beautiful! Probably would have gone with noodles for the meatballs, myself. Potatoes tend to be greedy with the gravy! But I've been wanting to make my own Swedish Meatballs for a while now. My grandma used to make them when I was a kid and they were always magnificent! I know part of the reason why was that she used half ground beef and half Colosimo's meatball sausage. I've NEVER been able to get the sauce she made just right, tho.
 
Cooked up 24 oz of ribeye (thank god it was on sale), pan seared it thin cut (the only way to cook steak if you don't have grill access imo...) and served it with fresh cut ja-lap-en-owes, home made guac, cheesy nachos (just cheese and chips broiled) and store bought salsa. Big hit at the SB party I was with: who doesn't like fucking thin cut ribeye with cheesy chips? Vegans I guess, monsters.

The host did wings for the 1st half (good job host, they were great), my effort was 2nd half. Was fucking awesome, way better than the shitty game. Don't cook often due to my shitty kitchen situation but try and do it up when I got a pot lock or something with friends.

Ya'lls roast chickens look awesome! Inspired me to do a pollo 'al horno (cuban style roast chicken) soon. Basically just drench the fucking bird in wine garlic sauce and roast it with taters and onions and beans and rice.

Po' man's Meat loaf.

Back in the mid to late 70's we had a Situation that cause a Beef Crisis here in the US. The core of the problem was pure fucking greed. The prices were so stupid high for the amount of limited beef in the supermarket that this began the rise of people eating chicken and pork which helped in the end Changed how we Americans eat our main meal.
One of the main stays of that time period was meat loaf. During that time soy extenders were placed in hamburger and it was actually good. The combination of people changing the types of meat to eat and the soy extenders caused the greedy money grab of the beef industry to collapse and meat prices went down for a long... long time. But the damage was done and people continued to eat a lot of seafood, chicken, and pork and other things to this day.

I have several recipes on Poor Man's Meat Loaf and the difference are what is available to me that works. A Real Poor Man Meatloaf are the ends of 3 or 4 days of other types of meals that would this be good in Da' loaf.

I ask my GF to get a a few pounds of regular hamburger. Nothing fancy. Unfortunately for me she LOVES my meatloaf... A LOT. So she bought me 8 pounds of hamburger meat. 15% fat. 30 Bucks. God help me... This is going to take effing long. Well time to grab all of the cooking equipment, Roll up my sleeves. Listen to Goblin Slayer while I prepare my loaves of Meat. you will need a decent food processor a large mixing bowl and several other smaller bowls to place items in.

NOTE: don't worry about cleaning the food processor every time as you will be using a lot and it is not necessary. The only thing you need to do first to put in on the processor is the toasted bread.

8 pounds of meat. Put in a large container and set it aside.
3 french rolls that were at their end of their life being sandwich material. Toasted, cut up and food processed until it is bread dust. Makes a little over 2 cups (1/2 liter). Put in a container and set it aside.
1 Onion. Cut and processed into a puree. Cut and processed into a puree. Makes around 1 cup. Put in a container and set it aside.
1 clump of Parsley. Cut and processed into a puree. Put in a container and set it aside.
4 apples that were in the fridge for 4 months. Yes they were usable for this. Cut and processed into a puree. Makes a little over 2 cups (1/2 liter).
Add 2 eggs and 1 cup of milk then starting add the other pureed contents with the last being the powdered toasted bread. Slowly add the powdered bread when it gets too clumpy and it will you add another cup of milk to make sure that the food processor does not bogged down. If you need more than milk (or water) then add enough until you get a nice semi firm goop.

You will add this goop into the container that you have the meat. Start mixing it together. Once that is done you want to place this meat stuff back into the food processor and start remixing everything in 1/2 filled sizes in the food processor. Then places the amounts of refined meat back in the Large bowl.

The reason why is a lot of people that I know do not like chunky style of meat loaf. By putting it back into the food processor you are making sure that you are breaking the crumpliness down from the chopped up material/vegetables/meat to a minced level.

Oil up your baking pans and place the contents in there. Bake at 350 degrees and check 40 minutes then every 10 minutes so to to make.
This makes around 12 1/2 pounds wet approx. 9 pounds cooked.

2 cups of minced apple.
2 eggs.
1 cup of minced onion.
1/4 cup of minced parsley.

Makes you a lot of food that you can freeze as well as give people a meal.

NOTE: I made 6, 1/2 pounds of meat loaf burgers and placed them in my fridge. The rest of meatloaf was baked.

So what does this taste like and is it worth all of the work? Absol-fucking-lootly it is. It is so damned good at base level that even cooking the meat loaf burgers were incredibly juicy and with a lingering sweet apple taste. In my case I did not need any additional seasoning and/or flavorings added to the mix. 10 to 12 servings depending on how you want to serve the meat loaf and of course it freezes well.

Dinner was awesome and the old lady was happy. Got to keep Moma happy you know.

The Burgers were great. Made them into Cheddar Cheese burgers with red onion, sweet pickles lettuce, mustard, and ketchup. With a side of Corn chips of course.

NOTE: It was a cold day in my house so what you are seeing is heat/steam rising from the meal and the cooked burgers. Again incredibly juicy and tasty. Just to let people know that you can eat well without burning a hole in your wallet.

So this ends another session and another Po' boy recipe from.... The Red Chair...
 
Made a steak with carmelized onions and mushrooms. Add to that a side of veggie soup with a tomato broth. Was pretty good.

It's easier to rinse my cups before using them than it is to clean the bottoms of my cabinets enough that I'm comfortable putting the lip on them.

The point of the picture was that 90% of their dishes came from McDonalds or Subway. But I'll admit, the fact they're all upside-down was the first thing that I noticed too.

Thrift stores are pretty great places to buy stuff like that, incidentally. Dishes, flatware, you name it.

Oh yeah I got the point, totally, but poor or not if you have to worry about dust on your cups then you have too many cups.
 
I made a grilled sandwich with brie and apricot jam this afternoon, and felt very fancy.
Then a terrible cold hit me and dinner was udon noodles in broth with veggies and garlic so I'd feel less awful.
I feel like I'm dying but at least I'm eating good!

Today I cooked down the ham bone from Christmas. It’s been taking up room in the freezer. I put it a stock pot and added a bunch of water, three tablespoons of chicken bouillon granules, and a teaspoon each of marjoram, sage, thyme, and pepper. Cooked it until the meat fell off the bone and the water had reduced by half. Once it cools I’ll put it in the fridge.

Tomorrow I’ll dice up/pull apart the chunks of meat and add vegetables, after I discard the fat that floated to the top and solidified. And add the beans I set to soak.

Then I’ll have soup along with some no-knead bread I’m also going to mixup today and bake tomorrow.
