What Have You Cooked Recently?

Semi-Cajun style Chicken and rice. Basically used fajita seasoning with chicken and a dirty rice mix. Came out really well honestly; they blend well together.

Continuing my exploration of the pressure cooker, I have created the ultimate frankenstein of my culinary experience

JUMBALENTILS

Basically a jambalaya but with green lentils instead of rice and added sweet potato because I need more sweet potato in my diet.

On the one hand it was surprisingly tasty and the spices/seasoning/flavours of the jambalaya married very well with the lentils, with the tomato/spice/sweet combo making the result seem like a creole daal, and the bacon and sausage and chicken flavouring the lentils arguably more than they would the rice.

On the other hand the combination of lentils, protein, and a shittonne of hotsauce and cayanne resulted in my terlit resembling the aftermath of the rwandan genocide the morning after I created this delicious abomination

I will probably be making this shit for a while given the 10kg bag of lentils I got on the cheap, and how easy it was to make with the pressure cooker

Haven't had beef in a while.
London broil, marinated a day sesame oil soy sauce fresh ginger lemon juice and garlic. I really like the asian flair with this cut it's my go to.

Sauce was a home made attempt at a1, followed a copy cat online with a few tweaks next time I'll copy proper leaving ketchup out was good but changed profile a lot. Also over did the raisin.

And tater tots because deep down i aspire to be white trash lol.

Meat was cooked correctly i just suck at photos esp when I'm hungry.

Roasted a whole chicken tonight. Rubbed it with onion powder, garlic powder, sage, black pepper, paprika, parsley and sea salt. Side of cornbread dressing and crushed red potatoes (skin on), and collected up the drippings and mixed them with canned broth and corn starch for a quick gravy.
Fucking fantastic. Still got some for some sandwiches tomorrow, even after eating perhaps a bit more than I should have.
 
Felt like cooking simple so I boiled rice, cut seasoned chicken into cubes and stir-fried it with green beans, threw in coconut milk and premade curry sauce and simmered it until done and then threw the rice and sauce together in one pan. Was good.

Bacon and egg bagel sandwich. Pan fried the bacon and eggs and toasted the everything bagel. I know some folks consider that heresy but it's better toasted.

Toasting only makes a bagel worse if it's a high quality bagel right out of the oven or maybe a couple hours old.

Any time after that, it should be toasted.

So unless you're getting it directly from a quality bagel place in the morning, almost all bagels are improved by toasting.
 
Made really good pork loin chops tonight. Coated them in a sort of homemade shake and bake made from cornmeal, onion and garlic powder, crushed basil, paprika, and black pepper. Served it with a side of whole wheat spaghetti tossed with sauteed minced garlic, basil, chopped spinach, and feta cheese.
 
I made a batch of simple syrup.

I've also developed this breakfast consisting of potatoes, eggs, onions, greens, and a little cheddar with a splash of hot sauce.
