What Have You Cooked Recently?

First time pickling my own corned beef. It turned out pretty good

I fried eggs for breakfast this morning. Used a little spray oil. Worked well.
 
I cooked myself a porterhouse steak. It's actually not bad with Lawry's seasoned salt and a bit of olive oil to keep it from sticking to the pan.

Seeing all these soyboys running around my area I had to do something about it.
 
I made spaghetti last night with what was left of the sauce, black olives, and mushrooms that I had used last time I made pizza. Also added some Italian herbs, and about two teaspoons (slightly more - I didn't level them out) of Carolina Reaper powder to give it some kick. Topped it with some generic breaded meat (and also Parmesan, but that came after I snapped the photo).

The spaghetti should've been slightly al dente, but I cooked it a bit longer than that before I remembered to check it. It was fine, though. Tasty, and plenty spicy.
 
I made a quick chicken and veggie soup with some savory ebelskivers. If you haven't had one, ebelskivers are little puffy pancake balls that you cook up in a cast iron pan and and them often serve with jam and powdered sugar. I made mine with some goat cheese and sage in the middle. Haden't made them in years but they came out just about perfect.

White Castle cheese burgers... on the stove.

Since I don't live near a White Castle, I have to purchase the frozen version. I used to put them in the microwave and they'll turn out as expected: below average microwave hamburgers. Now there are instructions for cooking them on the stove by steaming them but I haven't attempted it until now. And to be honest they're much more delicious!

Hopefully I'll visit a real White Castle in the future and judge for myself how similar a fresh one is compared to the frozen cooked either in the microwave or steamed.

The only things I can cook myself with any good success are omelettes and scrambled eggs. American style with lots of cheese. Do want to put some bacon in one someday but I'm pretty lazy. Did try making homemade mac and cheese with bechamel cheese sauce but it turned out to be more of a dough than a sauce so my macaroni dried out in the oven and I wasted two pounds of pasta

Tonight I made penne arrabiata.

My sauce was from scratch and included four kinds of peppers:
  • Pepperoncini
  • Paprika
  • Red chili flakes
  • Black pepper
I started with a tomato base of San Marzano Tomatoes (crushed)minced up anchovies, garlic and tomato paste. I added pecorino romano cheese into the sauce and made penne from scratch. Labor of love.

These are some goddamn delicious biscuits, some of the best I've ever made. The recipe was Frankensteined together from a couple others.
Preheat the oven to 450, put your cast iron pan in for preheating.
Mix together 2 cups of flour, 3/4 t salt, 1 1/4 t baking soda, and 3/4 t baking powder. Add 1/4 cup of cold butter in pieces and 1/4 cup of shortening and cut it into the dry ingredients with a fork until it looks crumbly. Mix in 3/4 cup buttermilk and mix until it is just barely combined. Do not overmix or the spirit of a large black woman will appear in your kitchen to holler at you. Also your biscuits will suck.
Turn the dough out onto a floured surface and pat out into a square. Fold it in half one direction and then the other, and pat it out again to whatever thickness you want. Cut out six biscuits and form the scraps into a seventh.
Take the pan out of the oven, drop the temperature to 425. Melt some shortening or butter and coat each side of the biscuit before placing them into each well ( works fine in a plain cast iron pan too). Bake for 12 minutes. They're lovely with just butter, but a sausage patty and apricot jam makes for a very good sammich.
 
I did a sheet pan meal- pesto salmon with roasted asparagus and grape tomatoes, and made a side of garlic couscous to round it out for tonight. I've been trying to eat more fish while not really enjoying cooked fish, but pesto salmon is one I could have daily.

(If any other kiwis have good ideas on how to do more fish without spending a ton on sushi, I'd be thankful for any suggestions- in dm if it would shit up the thread.)
