What Have You Cooked Recently?

Today was a huge prep day. I got a catering order for a sandwich ring for tomorrow, and had the privilege of cutting the backs out of twenty chickens to prepare for tomorrow's special: Barbequed chicken (dark meat quarters), with baked Mac n cheese, and cornbread. We gon' do it up right, tomorrow! Meanwhile, I'm exhausted. Pleh. Happy cooking to you all!
 
More Japanese curry. Potato, carrot, onion, beef. After thinly slicing the beef I soaked it in a baking soda solution. I read that it would make the beef tender, and it actually worked. I used S&B extra hot curry mix, added a pinch of salt, hondashi, msg. Sprinkle of chili oil on the curry and sesame oil on the rice. View attachment 1616610View attachment 1616611
Is it wrong that I could tell that you used S&B from a glance? It's a great curry with a very particular sheen. That looks delicious, and I hope you have a great meal!
 
Made chicken paprikash. Not the biggest paprika fan and I used tomatoes (which is inauthentic, sorry Hungarians) but I enjoyed it. I don't think the tomatoes really added anything to it though. I served it over wide egg noodles and used 1/2 sweet and 1/2 hot paprika instead of all sweet. Solid 4/5.

I pounded down two chicken breasts until they were nice and even. Then I cooked them on medium heat in the frying pan in a wee bit of olive oil. I then took out the chicken breasts, made a sauce for them out of a can of cheese and broccoli soup and let it heat up, added the chicken back into the pan and let it simmer until the soup was like a nice gravy. With it I had some green beans and some fried rice. It was the first time that I tried something like that and it was absolutely delicious (and easy). Probably going to do it with mushroom soup next time.

Chorizo fajitas. I affected positive social change by complaining loud enough that the grocery store in my white trash town doesn't carry Chorizo. Turns out Mexican food is the easiest food to cook. You just throw a bunch of stuff in a pan, fry it, and put it on a tortilla. It's an excellent way to trick your opposite gender pal into thinking you can actually cook.
 
I made zhajiangmian, noodles with ground pork and bean paste mixed with fresh vegetables. I got the recipe out of cook's illustrated, and the writer substituted the bean paste with a mix of hoisin and other ingredients since most murricans don't have bean paste. It turned out extremely tasty, and I'm actually buying the right bean paste now so I can make it again properly along with a shit ton of other spices to make sichuan food.

I also made a weird thing today. I mixed ground beef with a green onion, soy sauce and some chopped shiitake stems, fried the patties and added a miso glaze on both sides. Then I topped it with a mild cheese, Kewpie mayo, and quick picked cucumbers. What is it? It's an attempt at a Japanese fusion burger. But it was actually pretty good. I like making weird Asian fusion things, and my bf really loved it.
Later I made chawanmushi, savory egg custard, which is an actual Japanese dish but it didn't go over as well as the bastard flavor burger (though I liked it)
 
Slow cooker beef and broccoli on rice. And blackberry cobbler in slow cooker also. Chickpea avocado sandwiches with lemon garlic aioli. Realized i havent eaten potato chips in months.

mexicans know whats up. Most foods can be made from canned tomatoes, corn, beans that cost like a buck. Its all thoroughly seasoned. Stuff like enchilada sauce can be bought for cheap or made from scratch.
 
It's a not yet, but tomorrow, I want to take some of the orange olive oil in the shop, and make brownies with it. Then affix a candied orange peel piece on top. The run to the orchard did not happen. So, this is the best idea I've got right now for something easily baked, that's fun for me to do, and (hopefully?) still marketable at a country deli. Do you think the guys would like it?

Not bad.
