Yeah, I love my onion.
Onions, onions, I love goddamn onions. I love these goddamn things. I hope hipsters never get into them and suddenly drive up the cost because they're practically free. And they are the best ingredient for literally anything. We should somehow spread the meme that onions are somehow racist to keep the price low.
 
I put some sauce, cheese, spinach, and oil on naan and baked it. Fresh pizza is good but naan is naan.
Maybe I'll get myself a *good* knife for a Christmas present. The knife I have was that, it was my first good knife, but I think I can graduate to using a harder steel now that I have some experience with how to use a good knife.
Get a really good one and itll never betray you. Sometimes all a man can trust is his knife and stones.

I love raw red onions. I hate onion breath.
 
today I made 3 gallons of venison/ hot Italian boar sausage/ bacon stew . Carrots, celery, cabbage, 3 kinds of peppers,tomatos,and onions. Paprikasz style. The big dark winter is almost here . Snow flurries the other night. Tons of wood to turn from logs to firewood.
Need serious sustenance
3 gallons? That's impressive. I guess you've got dinner's sorted out for a white.
It's (AFL) grand final day here, so I'm up early making chunky pepper steak pies. I'll also be doing some venison steaks and chicken shish kebabs on the barbecue later. My wife will be doing some potato salad and coleslaw as well. I'm going hunting next weekend, so I'm hoping to do deer heart wrapped in caul fat roasted over the fire. That would make me very happy.

I burnt my rice like a dummy, but it was still edible, but now I have a pot to scrub clean. The chicken was pan fried, and the mole sauce was from a paste. It tasted pretty good but not as good as the restaurant.
I bought guajillo chilis from a supermercado and plan on making the sauce from scratch later.
I couldn't get the plate to look pretty and eventually just said fuck it good enough.

I've never had luck making Mole.. I can make a bunch of Mexican food, but Mole is always purchased for me. Do you have a recipe, or are you winging it?

Made some pineapple fried rice for dinner tonight. Delicious. Great comfort food meal for the start of the weekend. Plus, I love rice, and I had not had any rice for a long while. This definitely satisfied that craving.

Tomorrow I'm making breakfast pizzas-- making the pizza dough with Greek Yogurt, and topping the pizzas with mozarella, egg, spinach, and bacon. Good stuff.

Sometime next week, I'm going to make crab soup.
 
I tried a copycat Chick-fil-A chicken nuggets recipe last night. I had some homemade dill pickle juice that I brined some chopped chicken tenders in. Let it go for about an hour, coated it in flour mixed with spices, dipped that in egg and milk, then redipped it in the flour and fried it for about 6 minutes. They didn't come out tasting like Chick-fil-A, but they came out damn good. Served them with a homemade approximation of Chick-fil-A sauce that I made with barbecue sauce, dijon mustard, honey, and mayo which turned out almost like the real thing.

It’s fall, so I made a pumpkin pie cheesecake. I generally don’t like pumpkin pie that much, but this was great. The creamy texture and flavor of the cheese and the spices played perfectly with the pumpkin, and I melted some sugar like you would for flan and poured it on top to add just the right amount of sweetness to balance out the savory.
It’s not the prettiest cake I’ve ever made, but it tastes great.

Pork chops. Something about lemon pepper, powdered garlic, and a little turmeric and it comes out almost magical if you can get it well done, but have a consistent light pink in the center allows the meat to be a little firm but maintain some of the juiciness. Sometimes putting a little BBQ sauce on it while it cooks works too but I like the simplicity of lemon peper, garlic, and Turmeric.
 
Extremely simple dinner tonight. Baked two medium potatoes on the oven rack, with just a tiny bit of oil rubbed into the skins to help them crisp up. A little salt and some butter on top ... absolutely delicious and very low-effort. Sometimes you just have to go back to basics.

Half an Onion chopped
Two tblspoons minced garlic
1tsp salt
1tsp pepper
30 oz tomato sauce
rosemary, thyme, basil sage, ( 1 teaspoon)
Tsp oregano
Extra splash of olive oil
Meatballs and drippings

Meatballs
Ground beef
Salt, pepper, oregano, an egg, dehydrated minced onion
Baked at 375 for 30m

edit 2- also a bunch of bread crumbs in the meatballs
