What Have You Cooked Recently?

I made another soup last night, creamy broccoli cheddar soup that I probably shouldn't have made on the same night I planned on eating a ton of Reese's cups. So good though, especially with some hot crusty bread. I have maybe two more nights worth of leftovers so I'm looking forward to that. That's the great thing about making big pots of soup, I don't have to cook for a few more days.
 
Chicken and dumplings, except instead of a way of finishing an already roast chicken, I just started with the chicken. I think it's better with roast chicken after using the carcass for stock and rendering the fat for the dumplings (it generally takes two carcasses for that). I also kept the vegetables from the beginning. It's also better to make a mirepoix at the beginning, throw that out near the end and replace with fresh vegetables. That just seems wasteful.

Still, almost as good as the previous ones, although it required the plebbery of using cornstarch as a thickener, since I had to use broth instead of thick, glutinous stock.
 
I made a bacon, maple and banana smoothie this morning since I’d heard people talk about it before.

it was really really underwhelming. Maybe if I had pulped the bacon, but the chunks made it too weird texturally and the maple just didn’t show up enough to cancel the salt.

anyway, I had a meme food, it didn’t impress, shock, awe, on with my life.

next time, I might do peanut butter, honey & banana.
 
Today is Dia de los Muertos so I made Mexican chocolate cookies with a dusting of powdered sugar. So taaasty.

Fried chicken sando. Buttermilk brined breast, heavy on the garlic, then double dredged in flour, smoked paprika, oregano, parsley etc and shallow fried.


Home made quick red onion pickles, bunch of garlic and red chilli chopped in it

Bbq sauce

Floury bap and a rocket salad.




Pretty fucking delicious. Made two of them.

I pan fried some premade "pizza" dough, and served it with salami and mild gouda. The result was good enough that I will try it again with real dough, soon.
Pizza is in quotes because the dough looked terrible. It had a weird consistency, a strangely slick surface, and only contained inactive yeast. So instead of wasting my time rolling the little disks out into pizzas, I just plopped them into hot oil, at a bit over medium heat, and fried them until they were golden on both sides. This gave them some taste and texture, and made them surprisingly enjoyable to eat. They took on quite a bit of oil, so next time I am going to use a more aromatic oil or fat. Maybe butter, or lard, or olive oil.

Pretty fucking delicious. Made two of them.
And now I am hungry, again.
 
Slow cooked chicken thighs with red potatoes and carrots and tomato sauce. Smelled better than the end taste. Brussel sprouts and shallots in cast iron with cream, cheddar, and gruyere (my new favorite cheese). Hella good. And squash soups and salads.

Tonight, I'm not making anything particularly extravagant, but I prepared an overnight brine for a whole chicken. Put some salt, sugar, garlic powder, onion powder, paprika, oregano, parsley, rosemary, thyme, sage and white pepper into some hot water, let is cool after stirring, put a 6 lb chicken into a bag, and poured the brine over it. Hopefully this time tomorrow it will be ready to dry off and put in a 275 degree oven for 3 and a half hours. I like to cook meat low and slow because I grew up with quickly prepared and dry oven roasted meat when I was a kid. There is nothing more unappetizing to me than a dry chicken or turkey.
 
Butternut squash soup, made a huge batch so I can freeze half. Cooked onion and garlic and chopped fresh ginger root with a little bit of cumin and nutmeg and some whole. cinnamon sticks and fresh sage leaves in a little olive oil and butter. Then added chopped carrot, apple, butternut squash and chicken stock. Let it go long and slow till everything is soft and the smell drives you. Crazy. Puree in batches. This tastes rich but is healthy.
