What Have You Cooked Recently?

Thanksgiving soup.

It's like cooking chitlins. Get out the exorcist and ALL of the scented candles. Who cares if they clash in fragrance?! We need to get this house back in order before guests arrive!
You cook chitlins inside? Put the crock pot on a drop cord and set that sucker on the screened porch! It's the same way I make hash butter, actually.

Homemade wings are becoming a go-to with football season. Double dredged in seasoned flour, and a couple different homemade sauces. I cheated on the chipotle lime bbq, but made a habanero pineapple from scratch and that stuff was fantastic.
Making your own blue cheese dressing is also great.
 
Did some vegan black bean and mushroom burgs even though I'm not a vegan. If you're not putting kimchi on your burgers you're fucking up.

People bitch about Da' Bomb hot sauce tasting like shit but it doesn't; it doesn't taste like anything (besides absolute hellfire). Unless you're shooting a YouTube chicken wing show just use it for cooking. Cut some of that into your big vat of kimchi and let it stew for a week. Watch roommates try to steal your kimchi.
 
Homemade quesadillas are so easy and delicious. Especially with custom mixing a fajita seasoning for the chicken. Made a cottage pie (beef and vegetable stew covered in mashed potatoes, then baked) yesterday.

I’ve wanted to cook more now that I’ve moved out. I’ve made dinner from scratch all week and it’s great.
 
More duck. Two legs this time, braised with marjoram, thyme, and French four-spice, along with green beans, baby carrots and parsnips, and new potatoes. It was a three-hour slow braise, the meat is falling off the bones, yum.

Bauernfrühstück(farmers breakfast) in the evening...
Its very close to spanish tortilla. panfried potatoes, bacon, a bit of cheese, some fresh green stuff (everything that had to go) and in the end an egg.
now all leftover potatos from last week are gone-
 
Made a flourless chocolate cake for someones birthday. Pretty good.

150g light brown sugar (reduced by half to cut down on sweetness)
225g butter
4 eggs separated, yolk and whites
200g grated dark chocolate
230g almond flour/ground almonds
2&1/2 tablespoon caster sugar
9 inch circle tin or thereabout

Grease and line tin. Cream butter and light brown sugar till well combined. Add in yolk one at a time and continue creaming. Add in chocolate and almond flour and mix well until combined well. In separate bowl whisk whites until stiff peaks. Add in caster sugar and whisk briefly. Fold in whites to the chocolate almond mix 1/4 at a time, don't overfold and don't lose volume. When you don't see white streaks put in tin and bake 150C for 45-50 mins. Centre should be moist.
 
Been experimenting with hot chocolate recipes. Here's my favorite:


Melt a table spoon of butter and form a roux. Once blonded add a tablespoon or so of cocoa powder and mix over low heat just until incorporated then add a cup and a half of whole milk and half a cup of heavy cream. Whisk constantly over low heat and add a third of a cup of sugar (Only add more to taste) cinnamon to taste, a quarter teaspoon of extract (Vanilla or almond), and a pinch of instant coffee. Once incorporated add chocolate of your choice slowly, one or two peices at a time until fully melted, I use about half a big bar of dark chocolate. Once all the chocolate is added continue whisking until it steams if it hasn't already, serves two to three cups immediately.

The resulting drink is thick and viscious, toasty and delicious! It will probably give you diabetes if you drink it too much though as its basically chocolate gravy.
 
Made a hearty dish of rice, veggies, tomato paste, and pretty much every italian herb. I used diced tomatoes with green chiles so it's got a pleasant spice.

I also made some red velvet cookies but they're a tad hard. It's not my fault. I told my bf they were supposed to be soft out of the oven but he said they were undercooked and maybe put them in longer. ...Told him so.
 
I made a chili so nice I have practically slept for three days straight, just waking up long enough to eat another bowl or two, make some shitposts and go back to sleep. Chop up some cilantro, maybe some cheese, throw on a dollop of sour cream, back to sleep after eating that shit.

I love a good chili over rice. what are you using for meat?
