What Have You Cooked Recently?

Instant pot chicken stock.

On the stove right now, I picked up a chicken pho spice mix as already had lots of chicken stock and the whole place smells utterly amazing. Will mix with enoki mushrooms tomorrow for warming breakfast broth.

instapot pot roast
3+ lbs of beef shoulder, quartered-ish
bag of small taters
4 carrots
a thick chopped onion
5 cloves garlic chopped
seasoned the beef with thyme, salt, pepper, paprika
seared it
did up 3 cups beef boullion with a dash of worstichre
after searing the beef took it out, added the onion
then the garlic, then the carrot, then the potato, a bit more salt
then the buillion, small can tomato sauce, 1 cup red wine
some old frozen peas
beef on top
pressure cooking on high for an hour
we'll see how it turns out, but eating a few small chunks of the seared beef was good
going to toss in some rice after it's over
turned out fucking good
cooking down the liquid, skipped the rice for now

Today I made bread for the first time ever. It came out like you would expect bread to come out but it was as bland as shit. Anybody know how to make bread that isn't bland as shit?

Make sourdough or use a recipe that has sugar and milk. Most bread americans get from the bread isle has sugar in it.
You can also make beer bread if you want a "heavy" taste. Just use a dark beer.

Bought a shitton of dried black beans, lentils and chickpeas (call it prepping-lite idc) and I'm looking up recipes for things like channa masala and so on to make good use of this stuff. Black beans are simple enough to use, good for chilis and soups and... well, most anything vaguely Hispanic really (though black beans are more of a Cuban thing tbh). Lentil soup is definitely an option, too, it's been ages since I've had it.
 
The other night, I was with a few friends and we had a spur of the moment impulse to cook an onion. We just kind of fried it in a pan and added some spices like oregano, but our feedback was fairly positive aside from it being too salty.
Anyways, my question is: what are some useful tricks to pan frying onions? I want to use them next time.

Onions are the G-d food and are good anyway you cook them. They get sweeter the longer you cook them. Yellow onions are most pungent but are very good for French onions. Sweet onions are good raw but can be used as a substitute for white and yellow in a punch. Red onions are spicy and very good raw in a salad.
You can cook them in oil, butter, and lard. Just be careful with the heat and use appropriate smoke points. Onions and minced beef are a great quick meal. Added lots of seasoning and you have good taco meat.
Possibilities are endless. Experiment. Onions are dirt cheap so don't feel bad if you mess up.

If you want to freak out your friends/pleasantly surprise them caramelize an onion in butter with sliced/chopped apple.

Speaking of baked potatoes... I've just gone and baked myself a couple as a result of seeing this video. Turned out great, although I did put a couple of rashers of bacon into the air fryer about 10 minutes before the potatoes were done. Said bacon turned out nice and crispy enough to chop and sprinkle onto the potato.

Adding a pinch of baking soda is supposed to help them caramelize faster. Something about the way pH affects the Maillard reaction that's responsible for them browning as they cook.
