What Have You Cooked Recently?

Care to walk us through the process by any chance?
PS, the only thing I do different with the pork filling is roast it for less than an hour (it's okay to have pink in the middle pork. The meat will finish cooking in the steaming process...trust me) but use the rest of the sauces and ingredients . I use about 1/3rd of the pork and make a paste in the food proceessor... but the rest of the pork I cube up and mix with the rest of the filling ingredients.

The instant pot is what gave me the confidence to cook for myself and I don’t even use it as much as I used to but I’ll never have a kitchen without one
Have you used the setting to cook the bones? Bone broth is freakin awesome

Not wanting to buy a bread maker, but also not wanting to knead dough all the time, I recently started throwing all the ingredients into a food processor and running it for maybe 2 minutes. Excellent results and frees up a bunch of time and effort for other parts of meals
The recipe I followed actually suggests a food processor as a mixing option! I always make mine with the stand mixer and the dough hook.

Celebrating the spring equinox with chicken noodle soup and homemade bread. I make chicken noodle the lazy way by just buying a pre-cooked rotisserie chicken and shredding it. I've done it the proper way where you boil the whole chicken and make your own stock, but I wasn't feeling patient enough today! It still turned out very good in the end.
I had some issues with my bread dough being too sticky but the finished result was still tasty.

For it, had spaghetti and meat balls (home made) because was in mood for.

Tonight just threw a burger with colby jack, onion and mushrooms with some brown mustard on a pretzel roll, because I was kinda lazy.

A burger with some Swiss cheese and mushrooms? Now that's some hot stuff
 
I did a meal with a spring theme. Sauteed some cabbage with dill. Mixed sliced turnip with carrots, coating them with mayo to make a salad. Finally, I boiled some salmon with lemon zest, juice, and creeping thyme. I'd prefer if it was a freshly caught arctic char instead of frozen sockeye salmon. Also, the creeping thyme is better when fresh and not dried. While at the store, I found some sushi grade salmon. So I might look into making some grafinn lax at some point.

Creamy Cod and Potato Gratin.

Another Chef John recipe.
This is basically just mashed potatoes with Cod, and heavy cream on top. Whole thing is cooked in the oven. That mash though ...it's very, very, good.

Prep: 20 mins
Cook: 55 mins
Additional: 5 mins
Total: 1 hr 20 mins (1 hr 30 for me)

2 servings.

Ingredient list:

- 2 medium russet potatoes, peeled and quartered

- 2 (6 ounce) fillets cod (200g pr. person)

- 2 pinches cayenne pepper, divided, or to taste

- salt to taste

- 7 tablespoons unsalted butter, divided

- 2 tablespoons finely chopped shallot

- 1 cup heavy cream

- 2 teaspoons lemon zest

- 1 tablespoon fresh lemon juice

- 1 tablespoon chopped fresh tarragon

- 2 teaspoons freshly grated Parmigiano-Reggiano, or to taste (you don't need this).


Directions:

Step 1

Place potatoes in a large pot of well-salted water and bring to a boil over high heat. Reduce heat and simmer gently until tender, about 20 minutes.

Step 2

While potatoes simmer, trim, bone, and cut the cod fillets across into 2-inch pieces.

Step 3

Drain potatoes well and return to the pot. Add a pinch of cayenne, salt, and 4 tablespoons butter. Mash until smooth.

Step 4

Preheat the oven to 450 degrees F (230 degrees C). Grease 2 individual-sized casserole or baking dishes with 1 tablespoon butter. Place both dishes on a baking sheet.

Step 5

Transfer about 2/3 cup of the mashed potatoes into each of the prepared dishes. Smooth out evenly and make a shallow depression with a spoon down the middle. Set aside.

Step 6

Heat remaining 2 tablespoons butter in a deep 10-inch skillet over medium-high heat. Cook the shallots in the hot butter with a pinch of salt until they just start to turn golden, 3 to 4 minutes. Add cream, lemon zest, and a pinch of cayenne, and bring to a simmer. Add cod and wait for the sauce to come back to a simmer. Cook for 1 minute, while basting with the sauce; turn and cook for 1 minute more.

Step 7

Pour in lemon juice and turn off the heat; stir for about 30 seconds.

Step 8

Divide the pieces of cod over the potato. Add enough sauce to just cover the fish and return the pan to the stove.

Step 9

Bring sauce to a boil over medium-high heat and cook until the sauce reduces and thickens, 1 to 2 minutes. Turn off the heat and stir in tarragon.

Step 10

Spoon the thickened sauce over the cod. Add a light dusting of Parmigiano-Reggiano cheese.

Step 11

Bake in the center of the preheated oven until cod is cooked through and the sauce is browned and bubbling, 10 to 15 minutes. Let rest for 5 minutes before serving.


DO NOT leave out the Tarragon (you only need a little) because this is what'll give the cream a slight note of Sauce Bearnaise. It's a good dish for when you have friends visiting, and it's not too expensive.

Alright, so I've got to make a tray up for a friend for some "really health conscious people." I'm thinking chevre, cheddar, turkey, strawberries, bruschetta mix, a hot pepper bacon raspberry jam, and crostini. So, what am I doing wrong? I need tips, guys.

E- Gonna grill the crostini so it isn't tooth shattering, and also looks sexy. And I forgot to get a sticker for promotion. I hate personal catering. I always charge way less than I deserve, when it's a favour.

Have you considered getting better friends? Or just not having friends at all, because that way, you don't have to put up with idiots.
 
had a crack at some Serbian cuisine tonight, and made some šnicla Karađorđeva (rolled-up steak with clotted cream fried in breadcrumbs), prebranac (spicy bean stew), and salata šopska (salad made from tomato, cucumber, red pepper and spring onion, with olive oil/vinegar/salt/pepper dressing and a crumbled white cheese topping)
the only ingredient I couldn't get hold of was kajmak, so I used Cornish clotted cream as a substitute, and feta cheese for the topping of the salata šopska

I overfried the šnicla Karađorđeva a bit, so some of the fried coating fell off when I cut into it, but aside from that it was a success, and a very, very tasty meal to boot

Can of tomato sauce, cup of cream, cup of water, cup of yogurt, and more butter. Chopped up a rotisserie chicken and added the meat. Simmered for like 20 minutes. Turned out pretty good. Made about 6 servings.

Love it when someone makes their own curry.

Nothing special. I took a new york strip steak, made a paste of Worcestershire sauce, soy sauce, onion powder, black pepper, and pressed garlic, coated the steak with it, let it set for 3 hours, then cooked it blue. Probably doing it wrong but I liked it.
If you did it wrong, you'll make it better next time. If it tastes good, it is good. That's the only rule to cooking. Feck rules. Cooking is pleasure.
