What Have You Cooked Recently?

Today I cooked up a turkey roasting pot full of homemade baked beans using white navy beans with pork belly, salted pork, bacon and ham added in. It turned out surprisingly well. The saltiness of all the pork balanced out the sweetness perfectly. Though it is a little on the fatty side, which probably isn't too surprising considering how much salted pork is in it. Even so, it just isn't baked beans without it. Its where all those canned beans companies really screw it up
 
Bit of a thank you dinner for the family. Beef stroganoff, creamed celeriac and potato mash, baked courgettes with chilli flakes and boiled carrots with cumin seeds.

The brandy for the stroganoff imo is worth it for how it turns mushroom creamy beef to a more luxurious and complete dish.

Making creamy chicken thighs with spinach and roasted red peppers tonight, lads. Using this recipe as a base:
Would anyone recommend any extra spices or herbs to add to the recipe or should what's listed be enough?
I would maybe add a little garlic to it. Maybe some basil when you add in the spinach. Other than that, it looks good.

I've been having second breakfast since sometimes I can't eat a good portion breakfast directly after waking up. Got tired of just 4 sunny side up eggs. Decided to drizzle a little kewpie mayo, okonomiyaki sauce, bonito flakes, and dried seaweed powder on top. Definitely tastes better if a bit unhealthy, but really shows I need to not eat the same thing for a week.
 
Currently got some chicken thighs in the crock pot with some lemon slices, garlic cloves and golden potatoes. I seasoned the chicken with some Italian spices.

Going to pair it with some fresh green beans with toasted almonds.

Hopefully it comes out right. I haven't used my crock pot in awhile.

If you can find summer savory I highly recommend adding a bit of that to it. It goes really well with chicken any anything in a cream sauce
 
about 2/3 of a slightly old sourdough long loaf from panera
did that up as garlic bread with jarred minced in olive oil in the oven as it preheated
pull those, frozen breaded fish fillets
do them per instructions
homemade tartar sauce of dill relish, kewpie mayo, and prepared horseradish
some shredded cheddar
shit's dank af
 
I made scrambled eggs with beacon. Kind of getting tired about food since the pandemic started. It's more a chore these days. I been doing research about what are the best foods to eat.
The more extreme side I can take is going vegan with many restrictions attached or gradually do it through 2 years and 6 months.

Got some swordfish steaks and trying to decide what to pair them with. Prefer asparagus with beef, maybe green beans or something instead.
Too bad you can't eat apex predators very often. It's like eating an old-fashioned thermometer whole, they have so much mercury.

yeah it's a rare treat (swordfish is not cheap but I was craving the hell out of fish, the salmon was farmed and the tuna steaks didn't look good)
If I make it it's with just soy sauce and ginger. Maybe some lemon juice. It's so good it really needs very little to jazz it up. It stands on its own. And grilled.
 
Sometimes you need to balance trash with something wholesome and green.

Spinach is good. I had a tub of it, like 4 salads worth, but when you cook it down all of that makes 1 hearty serving. I used a skillet with a lid and leftover bacon grease, adding some bacony fried onions saved from the other thing I was cooking. A little vinegar, salt and pepper and it was perfectly done in about 2 minutes.

It is so satisfying to chow down on that much greenery, well seasoned, lightly cooked tender but still toothy in the stems. I think it's the tastiest and easiest possible way to get your fill of leafy vegetables. The shitting afterward is very cleansing.
