What Have You Cooked Recently?

A frankenstein veg and pasta bake to use up some random crap in the fridge. Green beans, courgette, spinach, spinach pasta, mixed beans out of a tin, lots of truffle oil and capers and salami. It all sort of hangs together but nothing special.
 
Salisbury steaks and mashed potatoes. I don’t think I ever had Salisbury steak before so it sounded like a good idea I followed this recipe I only made one adjustment, I cooked the onions sliced first till almost French onions, removed, then followed the recipe. It turned out really really good. Everyone in my home loved it.

Blueberry white chocolate frozen custard.

Lazy plating. Once the lemon pound cake is done I'll serve a small slice in the dish with the ice cream.

I made whipped cream, threw some sliced strawberry into it and then put it in the freezer for a few days. Ignoring that I then bought those 1.50 cake cups at Kroger and a packet of raspberries. Made a simple syrup with sugar and water, threw the raspberries into it, smashed, mixed, reduced and poured the mixture into the cake cups. Into the fridge for a few hours.

Took them out, put into bowls, added a scoop of literally frozen whipped cream and strawberries. I was just fucking around because I needed a desert for the 4th of July. My guests thought I was Gordon fucking ramsay.

Take heavy whipped cream, whip it until it's at the stiff peaks phase, add refrigerated dulce de leche, beat that in until it's fully mixed, top with Saran wrap or whatever, "freeze," (it doesn't actually freeze), caramel ice cream.
 
Carnitas burrito. The carnitas is pulled pork in a slow cooker with diced onion, diced green bell pepper, a glass of orange juice, and a rub of spices. Served with Spanish rice, refried beans (both of them both on the side and in the burrito), sour cream, and string cheese. Grilled pineapple on the side.


Disclaimer: The rice came from a box, the beans from a can, the only thing made "from scratch" as such was the pineapple and the carnitas.

I made a cornish game hen. My second one.

They're fun to cook since they're small and cheap, so it feels almost like a practice bird. I thawed it, sliced it out of the package, dried it off a bit with paper towels, then gave it a rub with olive oil and sea salt. Into the oven it went on a roasting rack at 375, flipped once halfway through. Then, after it was fully cooked, I put it into the air fryer at 400 for about 5 minutes or so.

Simple but perfect results that would have been even better if I had more creative spicing. The air fryer bit is so the skin is crispy, which makes it taste insanely delicious instead of being a slime casing around the meat. After that I pretty much tore off the meat by hand, save for the drumsticks and wings, which are just little snacks at that size.

Great stuff, and I'm gonna try a similar bit with drumsticks next, since that should be even cheaper, yield more meat, and the same tasty skin.
 
Last night: pulled pork in the crockpot (paprika, chili powder, brown sugar and sea salt rub, onions and garlic, pineapple juice, served with decent barbecue sauce on an onion Kaiser roll)
Night before: Red beans and rice with andouille sausage
At some point in the near future: motherfuckin' CORN BREAD and something to go with it
 
my uncle just got home from the hospital after brain surgery. He's gonna live and the surgeon said he was able to get all of the cancer he could see, but that my uncle will most likely need to do chemo. SO I think im gonna make a chicken pot pie and a garden salad to take over to his house in a couple hours.

Best of luck to your uncle, that shit really sucks.

If your states laws are amenable(and your uncle has no objections) I would suggest he tries vaping/smoking thc to help with the side effects of chemo. Unfortunately edibles may not be the way to go either, there are studies that show thc in edibles form diverts liver proteins used to break down chemo drugs to a much greater extent then inhaled thc.

not in a medical state unfortunately, but I have connections to get medical weed, thc vape pens, and gummies. I'm gonna suggest it to him because yes, the chemo side effects are awful. He's a pretty straight laced guy so idk what he'll think. I didn't know that about gummies being bad for the chemo drugs, i'll keep that in mind, thanks.
 
Tonight I made pan-seared salmon.

Sockeye salmon, scored the skin about 1/2 inch apart so it wouldn't curl up.

Coated frying pan with olive oil. Put salt and pepper on the pan. Heated pan up to 5/9 and let it heat up until the oil got thin, made sure bottom of pan was coated, put salmon skin-side down. After it was cooked about 2/3 through, I flipped it so the thick part was near the edge of the pan. Then, I tilted pan so the oil cooked the thicker part of the salmon (and coated with some of the salt and pepper that was in the oil). After that side was cooked, flipped it again and put it so that the skin was out of the oil until skin was crispy.

Was delicious.

Yeah the edibles issue is kinda new, one of the myriad problems with prohibition is that researchers can't openly do studies on it without a risk of losing fed funding.

I don't know what tumors your uncle has, but this article may help convince him to try cbd at the very least, you can generally find cbd products everywhere now


Honestly if he turns down the offer just tell him it's always an option and you will be there with it if he needs it. Chemo is hellish, and if he refuses at first he may change his tune later.

My very straight laced religious aunt was dead set against using the "Devil's Lettuce"(I shit you not, she actuallycalled it that), but after her 2nd infusion she asked my mom to bring me by with "some of that stuff" and I gave her a vape pen and taught her how to use it and then she and my mom both tried a little hit, and in no time they giggled themselves silly watching TV.
