Stilton. More specifically, Colston Bassett Stilton.

The tang, the texture, the richness. Best served with crackers, grapes and an artisan chilli jam of choice.

I swear by this stuff. It's a sweet goat (and cow in the US) cheese that tastes vaguely bacony. You can literally put it on a sammich with lettuce and tomato and it tastes like a BLT. (But add the bacon anyways.)

If you can find the real Scandinavian shit, get that. But this stuff works in a pinch.
