I wonder, why are the ones lacking an institutionalized religious belief the most curious about what religious belief they actually follow?

When I took the test (genuinely) I still said all that stuff and ended up 100% UU, When I took it to be as little UU as possible I gave very specific theological positions (which they don't like)But aren't they not as institutional? Like, if you believed that having a specific house of worship and clergy were important to you and your faith, I think that's pretty against UU.
