What's your favorite cheese?

I like seven-year aged Gouda. The cheese becomes a golden yellow and the texture becomes crumbly with spots of tyrosine that has started to crystalize within the cheese with age, and the cheese takes on a sort of butterscotch flavor and sweetness mixed with something like cheddar.

I've only ever had 3 year gouda and that shit was fantastic. I usually buy a spread of pricey cheeses for the holidays and I'm gonna look for an even older gouda this time.
In an ideal world I'd say Parmigiano Reggiano because it's fantastic and highly applicable but in this world I can't deny my love for cream cheese. It's the most "dairy" food in existence, short of just milk. Delicious. Lack toads and toddler ants muddafukkas could never understand the euphoria of using this American delight as a breakfast spread or as an ingredient in sauces
No breakfast in the world will ever top a good everything bagel so fresh that it's still warm from the oven and the cream cheese melts a bit and gets all gooey.
 
Bread cheese. Bought some when I was in States a few years ago and it was a delicious cheese to snack on. If I ever go back to Milwaukee, I'll definitely buy some more.

Since it's not common where I'm to, I usually buy Monterey Jack or a medium Cheddar.
 
I legitimately cannot choose a favorite. Oh, I can say which are among my favorites, but choosing one above all others? Impossible, I love them all!
That said, I love a nice sharp cheddar. Could never turn down a nice piece of cheddar. Cheddar is just plain good cheese that you're never not in the mood for.

Tête de Moine is really tasty - I like to unfurl it at room temperature cuz it tastes better that way. It's good when not pre-sliced, too, but I'd rather slice it nice and thin.
Some cold, salty, wet, halloumi string cheese. Sounds gross but it's great
Does the stuff you get smell like fish? I got some halloumi from Aldi and it smelled revolting.
 
I'm partial to brie.
What's your favorite thing about brie? When I have it, it's usually baked - otherwise it's kind of unremarkable and rubbery.

I was going to recommend Fromager d'Affinois products, but I realized the one I like isn't the same as brie.

I like that it's creamy and salty. It is absolutely best warm, yeah. Add a little cranberry or other tart fruit it too? A+
