Why God created Us in his image?

Nah, Gnostics need to be burned absolutely. The Union between Man and the Angels was sundered with the flood and the covenant with Noah.

The Gnostics believe that christ was just another iteration of mortal coupling with divine beings. That he is not God. Their art work like the above also supports the heresy. And seeks rather perversely to tie the serpent of Eden to their mythology.

It's a corrosive belief system that has plagued Christianity since it's founding and in its current iteration is supported by heretical protestant denominations.

"in his image" could simply be a mistranslation.
It's not inconceivable that the intended form was "as he imagined" or "in his mental image."

Anyway, why is god a 'he', does 'he' have testicles?
Are their other beings of equal attribute that 'he' can mate and procreate with?
