If you look at your local land registry I promise you that you can find plots of land that practically anyone can afford, many of which come with a lot of rights, like rights to timber, or to minerals, or surface rights, etc.
I've seen some cheap plots in northern Europe for under 15,000 Euros, between 20-40 acres. They're very remote, yes, but remoteness is a small price to pay for freedom. You're thinking like a modern consumer instead of trying to escape that.

It really only depends on what you're willing to learn, and what you're willing to do. You know stone homes are made from stone, right? If you're willing to move stones, and cut down trees on your land into a house shape and can read well enough to follow an electrician or plumbing textbook, you've completed 90% of what a house is.
