Bethesda RPGs. Elder Scrolls and Fallout are so similar that I count them as one game series. It's not much different than how Final Fantasy can make sci-fi games and fantasy games and call them part of a series.
 
looking at my steam games, the stuff I have sunk the most amount of playtime into is as follows;

Dragons Dogma; Dark Arisen - 292.7 hours (not counting the time I spent on both the PS3 releases)
Crosscode - 281.7 hours
Risk of Rain 2 - 257.4 hours (not counting the time spent on modded versions)
Final Fantasy XII TZA - 203.3 hours (not counting the time spent on the OG PS2 release)

and if there was one series on this list that I could not live without, it would have to be dragon's dogma. the MMO was also very enjoyable if extremely busted and requiring the use of a VPN in order to play, plus there might be a sequel coming out in 2024. It just seems like the obvious choice.

SimCity, especially if you add mods. Once you begin building a city, you get this addictive "just one more turn" syndrome. I'll just build a small village. Hmm, let's expand it. Did I put enough shops? What? No farms? Not now, mom! I'm building a small town now. Now, what was I doing? Oh yeah, I was building an airport to support my skyscrapers and... Wait. Oh, not again! It's the 4th time I was supposed to build just a small village and end up building a metropolis. Oh well, next map.

Minecraft or Mario. Both have a large selection of mods/hacks and active communities so I'll be eating good for years and years.

Sims 2 and 3 namely, but if I can somehow emulate Sims Castaway for PS2 on my computer I'd be set for life. Maybe some Sims 1 if I'm feeling nostalgic.

Sims 3 here to, too bad it unfortunately runs like a piece of shit.
Sims 1 on ps2 is still my all time favorite, would love to have that on PC.
 
Minecraft. This is a no brainer. My enthusiasm comes and goes but when I play, its usually for weeks on end, building.

There's only one correct answer to OP's question, and that answer is 'Jagged Alliance 2'.
It's an eternal mystery to me that such an amazing fucking game has never been equalled or bettered.
Almost 22 years old and still my benchmark for amazing games.
