This lady has a YouTube channel I occasionally watch (even though I'm a pretty proud omnivore/carnivore) -- all part of my goal to cook homemade curry with cheap and easy ingredients for the upcoming Great Recession/Depression 2.0, lol. I might try a doctored vegetarian version instead (use dairy when needed -- just have it on-hand and is easier/cheaper to get a hold of compared to almond butter and coconut milk where I live/shop) one of these days:Vegan red lentil curry. I'm not vegan but this stuff is seriously creamy and delicious. I've made it for a few people before and they had no idea there were no animals products in it. The almond butter tastes amazing.
