What Have You Cooked Recently?

Vegan red lentil curry. I'm not vegan but this stuff is seriously creamy and delicious. I've made it for a few people before and they had no idea there were no animals products in it. The almond butter tastes amazing.

This lady has a YouTube channel I occasionally watch (even though I'm a pretty proud omnivore/carnivore) -- all part of my goal to cook homemade curry with cheap and easy ingredients for the upcoming Great Recession/Depression 2.0, lol. I might try a doctored vegetarian version instead (use dairy when needed -- just have it on-hand and is easier/cheaper to get a hold of compared to almond butter and coconut milk where I live/shop) one of these days:

Some of her recipes are great. I'm the same where I'll cheat and use dairy since it's easier. I would recommend the time consuming crunchwrap.


I have a vegan friend and I swear, cooking for her takes twice as long as anyone else. Everything is 'now we can't use X so get out your food processor and we're going to create a tofu alternative that will not only add 20 minutes to your prep time but will make a giant mess as well.'

Red lentil curry is amazing, and it's why I usually mention something like it or dhal whenever I point out that the point of being a vegan isn't just to try and fight the B12 craving by making shittier duplicates of meat.

It's why I also seriously recommend mushrooms so much; they're like tofu in a way in how they enhance the ride.

Almost any Indian dish based on lentils is amazing. For non-Indian, an ingredient that needs to be in any lentil soup is Hungarian smoked paprika. Try it some time.

I also fully agree with the best vegan recipes being the ones that don't attempt to imitate meat. If someone actually is a vegan and is still desperately trying to imitate meat, why? This is like an alcoholic who drinks O'Doul's and dreams of alcohol all day. If you want to stop eating meat, just stop eating meat.

Vegan recipes that are good are good because of their own merit, not some vague similarity to meat. A minor exception would be "seitan" which is often called "mock duck" despite tasting absolutely nothing like duck. It's basically pure gluten with some flavoring. Fuck gluten-tards who don't even have celiac disease.
 
After being hesistant for years because i never trust the hype on anything, i got around to finally cook scrambled eggs à la Gordon Ramsey. I've been eating them for three days straight now and i don't think i will ever cook scrambled eggs differently again. I already liked my scrambled eggs very moist (i'm also a big fan of raw beaten eggs, as a dipping "sauce" for Tonkatsu, for instance) but prepared his way it is a huge step up from how i did them before. The créme frâiche also adds a lot to the dish. Uh-mazing!

Absolutely. Got a relative who has it, either you are in excrutiating pain when gluten touches your stomach lining, with a possibility of cancer in your future or you are an attention-seeking twat that enjoys making a chef's life harder. There's no middle ground from how i understand it.
 
Glad to see some vegan recipes on the thread, I'm still on the vegan kick(faggy ik, i dont really care if anyone else is, it just works for me). I made chili for the first time in months since fall weather is kicking in. I marinated pressed tofu in a chili adobo, lime, and a bit of maple syrup for like 6 hours before baking until crispy, then adding to the chili. I really like black beans for chili so I've been using a pretty basic cayenne/chili powder/garlic/cocoa base with salt and fire roasted tomatoes, caramelized onions and mushrooms, and topped with lime wedge and some tortilla chips and pumpkin seeds.
 
I have a ridiculous all-beans version of chili just because fuck Texas and it is basically every normal chili recipe, but instead of meat, it's beans, all beans, every single possible kind of beans, no tomatoes either, just turn any actual chili recipe into a fuck-Texas mix. Substitute beans, literally any beans you have, for any meat in the recipe.

And also pump it up with every single hot pepper you have.

I don't actually remember them all, it was a long time ago and literally just every bean I had. Red beans, black beans, great Northern beans, navy beans, lentils (technically not a bean), fava beans, kidney beans, split peas (also not really a bean), and several others, including ones I didn't even know what they were, plus half a leftover bag of the Hurst's 15-Bean Soup mix, so whatever is in that too.

I'm suspect the "no beans in chili!" thing is regional in Texas, my grandpop always loads his with pinto and black beans and his dad did the same thing. Which made sense when you've got eight god damn kids after growing up through the Great Depression.

Anyway I made a sort of lazy man's chicken adobo, served over rice. I'll never stop bitching about how much chicken thighs have gone up in price.

Beans belong in chili. I would be open to an all beans chili. The aftermath may be a nightmare though.
The increase in dark meat chicken prices must be a regional thing. Dark meat chicken and pork prices have remained fairly stable here.
Beef is fucking retarded though.

The USDA made chicken farmers cull their herds over 'avian flu' earlier this year. The one place where I live holding the line on chicken thigh inflation is, of all places, Trader Joes, where they are still $1.99/# somehow.

Just bought American raised wagyu at $16 a lb direct from farm. Normally I'm not one of those people that thinks wagyu is the king but the guy was looking to offload and I filled my deep freeze.

I'm not trying to burn through that shit though, but it's nice to know I've got it. Prime rib roast for Christmas that puts me in a 3 day coma, here I come.

I would have done the same. I too am somewhat skeptical as to the quality of wagyu but I would have purchased it at this price just to have the experience.
 
I was tired so I dumped some ground chicken in a crockpot and sprinkled chili powder and curry powder in it and when I woke up I cracked a few eggs in it. Gotta get dem gains. I ate it on 12 grain bread with bbq sauce. Big jug of cold water to wash it down.
I did watch a few King Cobra cooking vids recently.
 
can of aldi spam, cut into... I guest 16ths, half then half etc until about half inch cubes-ish
can of tomato and chili
glob of aldi velveeta
glob of shredded cheddar
(all about the same size amount)
some dried minced onions, red pepper flakes, maybe salt or something else?
low on the spam first with the seasonings, after the grease starts dripping out crank it up a little to get a bit of a sear
add the everything else

Stew meat is still pretty reasonable. It's the scraps from butchering, usually chuck. Tasty, it helps to bring it up to room temp and cover it in salt to draw out moisture, leave it for a half hour or an hour and then rinse the fuck out of it before cooking. It breaks down the protein molecules or some such and makes it very tender, I don't know exactly how it works, look it up for fussy food and food science blogs explaining it.

There are many good stewing sauces. I like the madras curry simmer sauces. Sear the meat first to get a char then let them simmer about 20 minutes and make a side of rice and that's a very nice, satisfying meal.
