"Lack of subtlety". You just described Merlot perfectly.So something like a merlot, which I usually would not drink, is generally good in a beef dish because of its bold notes and lack of subtlety.
As I've said many times it's a wine that goes with everything and complements nothing. It's a fine little wine to cook with or if you want to blend with something bold but on it's own to drink? No thank you.
