I didn't know 16-bit games were already a thing in 1986 when home consoles were always 8-bit.

Technology is always present way before it's able to land in the consumer market but in this case it wasn't even late. x86 as a platform was 16-bit since 1976 (though for a very long time it was marred by too many design roadblocks to be "gaming" machines, and improvements were very gradual) and you also had computers like Amiga 1000 releasing as far back as 1985.
The goal of video games home consoles at the time was to launch highly specialized for gaming products that, taken as a whole, would be relatively affordable compared to either arcade machines that carried a much larger entry price and budget, or general purpose home computers (where pretty much only Amiga was able to compete until mid-90s). Using "outdated" 8-bit instruction set meant nothing if the dice could be acquired cheaply, instruction set was already well known by the developers and you additionally coupled it with specialized graphics hardware.
