Hell, even the "add an egg" step in box mix was added to make housewives feel like they'd done something other than rehydrate the ingredients.
i would hardly care if it's a supermarket of off-the-shelf cake because i'm already expecting subpar quality, but when you're making a special order, which this woman was, you need to ask about the practices and expect quality better than what you can make at home with some boxed crapLike I said, the only way you would likely be able to tell is that the scratch bakery would cost more because they have to mix the emulsifiers by hand. Maybe if the bakeries you frequent are Walmart bakeries, then it's plausible.
