God, I want to work in the cheese industry in some capacity...
Try making some of your own. Mozzerella is pretty quick to make. I've been contemplating making Cheddar but that's about a 3 or 4 month minimum aging process. You can order the cultures online, but a lot of them are mass produced which personally I'd like to avoid if I do pick up the hobby.

Trader Joe’s is one of the major players along with Whole Foods that helped modernize the American cheese market. For the west coast if you don’t have those two adjacent you are likely living in a food desert.

Kinda hard to describe it gets goofed on because it does have a very cheesy small town market aesthetic when it’s owned by one of the halves of the German market chain Aldi. But TJ’s has you covered in for cheese.

Trader Joe’s is one of the major players along with Whole Foods that helped modernize the American cheese market. For the west coast if you don’t have those two adjacent you are likely living in a food desert.
Funnily enough, went to a Trader Joes earlier today, got me some havarti cheese. As absolutely insane as it sounds, they are legitimately cheaper than the usual local supermarket chains.

Like 3 bucks for the cheese (it admittedly isn't a big piece but for a bit of cheaper quality cheese it ain't bad) and the prosciutto I got as well was 4 bucks. Go for store brand, unironically trader Joe's store brand shit is A to S tier.
 
My local Kroger-owned supermarket recently got Rattlesnake Cheddar in stock and it's become one of my favorite cheeses, it's a shame they only seem to stock it during the summer.
Null has got me on a Gouda kick. The only thing that did kinda suck was dirtying my grater when I wanted it shredded so I bought this handy dandy Olive Garden-esque tool from Oxo.


Cook your omelette, then just pop it back in the fridge. I think I’ll only have to clean it once a week obviously always checking to make sure the cheese isn’t growing anything funky.

Ironically enough I've always found Trader Joe's cheese selection to be lackluster (although that could just be my local one) compared to Kroger-owned supermarkets, they have a hard cheese that similar to one of my all-time favorite cheeses but the flavor profile isn't the same.

I have become something of an aged Cheddar snob lately. My whole life I have been eatin' cheap and mild cheese, but now that I am older, I can afford to splurge on old cheese. It has a much different mouthfeel when aged to the point of developing crunchy crystals, with an intensely potent taste.

Hooks Cheese has begun the pre-order of their 20 year old Cheddar. At $209/lb, for each 1lb piece of 20-year Cheddar ordered you will also receive 1lb of 15-year cheddar, 1lb of 10-year Cheddar, and 1lb of 5-year Cheddar.

Been having an obsession with BellaVitano cheese at the moment. Got some of the Tomato Basil on sale a while back and now have been making my way through the bourbon and merlot versions. Good cross of parm and cheddar with a bit of crystallization.

In the shit category I recently bought Ski Queen because I kept hearing good things about whey cheese. I don't get the hype. It tastes like sweet goat Velveeta.
