I think Bob is mistaking the effect of sugar, which works with the salt to alter the osmosis of the meat, making it juicier, with the effect of an actual fucking meat tenderizer (enzymes such as bromelain or papain, or any given acid like sumac, lemon juice, vinegar, etc.). Bob's so stupid that he thinks making meat basically wetter, is "tenderizing" it. Making meat so that it doesn't dry the fuck out is NOT, I repeat, NOT the same as tenderizing it - which is accomplished with an acid/enzyme, slow moist cooking (for tougher cuts), or pounding it into oblivion with a meat mallet.

He spoke of Elon Musk the way one speaks of the Wright Brothers or the guys who laid down the railroads, because Musk's strategy -- and the crippling risk aversion that's essentially destroyed NASA -- is likely to reduce the cost of putting cargo in space from ~$25,000 a pound to ten dollars a pound.

It was a fascinating talk from a guy who actually knows space and the history of space travel and who has worked in the industry.
