Decrypting is usually done by a specific decrypt program (which depends on the encryption encoding) but the decryption is you put in the correct password, and it reverses the encryption so it's readable.

The luks files are Linux Unified Key Setup, which is used to encrypt full partitions, so those could be copies of an encrypted file system partition. Same deal applies, enter the correct password and it decrypts the partition.

I'm not even trying to be a contrarian here, but the first one is owned by apple, the second one is not free and the third one, well I'm not sure I can trust them. Posteo seems great, but if you're comfortable with Apple, iCloud+ is 99 cents a month for 50GB storage, 5 aliases, and the Hide My Email feature, plus it offers IMAP/SMTP support like you wanted.
