People really need to learn that due the way the email protocol works there is no such thing as an email address which cannot be spied on. Sure there might be people out there with integrity who if given the chance to do so still wouldn't read your emails, but whoever has control of the server absolutely has the ability to read all emails which pass through it. Even those services which advertise themselves as "private" can still read your emails if they choose to do so. Email should only be used to sign up with services which require it, bills and trivial conversations that you wouldn't be embarrassed by if anyone else ever saw them; it should never be relied on as a means of secure communication.

that's why there's encryption so all they can get there was some communication about something, but nothing more.

there is no provision in the standard email protocol for encryption that cannot be read by participating mail relay servers. an email client could encrypt email contents, making what the server can do irrelevant, but you can do that with any provider. you don't need mail with cocks. protonmail only has e2e for inter-proton emails, because they don't actually use the standard email protocol internally. emails you send to external addresses can be read in transit. even the 'secure' link-type emails that you can send to external addresses.
