I've been wondering, but what do butchers do with their excess beef fat? I never see it in grocery stores
Some portion gets sold for use in cosmetics, and other non-edible uses.
But, a lot of it gets straight up thrown away. No I'm not kidding. The waste is disgusting but a lot of people don't want it. A lot of preparers also trim the shit out of the meat before they sell it so keep in mind a lot could stay on the steak or the roast etc but people are less likely to buy untrimmed (primal) cuts because muh saturated fat.
Sad because it's often the most flavorful part of the steak or can be hand trimmed and rendered down to tallow yourself.

Yeah sometimes. It depends on the place. Keep in mind what most butchers will have is beef fat trim or suet, not tallow. Tallow is rendered beef fat. The former is the layer of fat on the meat (beef fat trim), or the fat around organs like the kidneys (suet). Both are fine for cooking. It just means you need to render it yourself which isn't difficult.

Some have caught on its a luxury item and will charge a fair amount, some will charge like 1-3$ a pound for it, and some will straight up give it away for free.
Keep in mind some grocery stores get their meat pre-trimmed so they don't always have it. For butchers I always call ahead and let them know how many pounds I want a couple days ahead so they know to set it aside. They really appreciate this.
Just remember it never hurts to ask and they're often happy it's going to someone and not wasted.

@Diana Moon Glampers said rendering down tallow etc is messy but I disagree. I throw my beef fat trim in a crockpot on low until the solids fully separate. Then strain with a cheesecloth to remove any solids. No muss no fuss. If it's solid at room temp you also don't have to refrigerate it as it'll stay good long term as is. You can put it in the fridge if you want though. I do that in the summer.

For cooking with it, I wipe down everything with soapy water once a week (in addition to cleaning up obvious splatters etc if I see them) so I've never had an issue or noticed any grease.
Just remember! When cooking with animal fats be sure to pour anything you're done with in the trash once cool or into a heat safe jar and then transfer to the trash. Do not pour down the sink drain! It will build up and that is a hefty cost to clear out.

In terms of state sponsored gluten free and dairy free food.... is it really that difficult to eat meat, vegetables, fruits, and gluten free grains like corn? You know. Normal food. What the fuck are they eating that it's such a big deal to them? Processed junk? Genuinely baffled at that complaint. Just cook your own food faggot. No issue with having special dietary needs, but learn to cook for fucks sake. It's not hard you lazy bitch!

allegedly the auction wasn't legit, the onion didn't put in the largest bid and didn't have the cash on hand. the judge froze the sale until a hearing next week

alex jones claims that if the judge does the right thing and voids the sale and puts up infowars for auction again, he has backers with cash on hand who will high bid for it and gib it back to him
 
Has a judge ever done the right thing in his case? Literally everything I know about the case is either judges do something wildy unprecedented at best or outright malicious to him at worst.
i know when the first federal trustee the judge appointed tried to make jones shut infowars down, the judge booted him and appointed a new trustee. this second trustee is allegedly the one who did this shady fake auction thing. this judge is also the one who when the plaintiffs tried to claim that the verdict meant they now owned alex jones' name and likeness basically in perpetuity said uhh that violates the 13th amendment fuck off

this judge is not the judge who presided over the defamation case, this is a US bankruptcy court judge in houston. jones obviously couldn't pay 1.whatever billion dollars so he filed for bankruptcy in texas and the US bankruptcy court took jurisdiction of handling his assets. this is the judge in charge of the bankruptcy case and jones says he's a true and honest dood so idk lol

this auction stuff is all according to alex jones ofc, other than the fact that there is an evidentiary hearing next week pertaining to the details of said auction (not-auction?)

Definitely processed stuff. Expensive processed stuff, a lot of it, if you're looking for substitutes like bread and baked goods. I'm very lucky in having both the best local grocery store in America local to me and a few very good local Gluten-free bakeries, but they are expensive and there's just things you can't replicate. These...people probably have everything delivered, so cooking for themselves is right out. A lot of them are probably only "Gluten-intolerant" because they're incredible fat and unhealthy and blaming it on things other than their own laziness. Also makes them "special," just like the mental illnesses these people collect like Pokemans.

Eating Gluten-free doesn't have to be expensive, you just have to check the ingredient list, and learn what to look for. Some is obvious, some isn't. Malt Vinegar is right out. Soy-Sauce? Only Tamari basically. Alcohol? Depends, it's all technically gluten-free but something about it can still effect some people. Learn to love rice and the Thai make some fantastic cheap rice noodles that are good enough.
