I actually like this with a white sauce like a bechamel
I like your style.
Now you've got me thinking of a little cheese sauce on a tomato base, perhaps some pancetta...This is next on my to do list.

I've been experimenting with different salts when cooking and the best I've found on pizza (and in general) thus far is Maldon smoked sea salt. It's got that touch of umami that enhances everything else, very nice.
 
I've just remembered the worst pizza I ever had: buffalo wing pizza. It had buffalo sauce for the base, topped with blue cheese, shredded chicken and chopped up celery. The blue cheese overpowered everything except for the little watery crunches of celery as you chewed, it was a vile experience. Sad.

It's one of those ideas that sounds like it could be good but really sucks in practice. It could probably work as pizza with a normal red sauce with buffalo chicken as a topping, and maybe a few dabs of bleu cheese and celery sticks but on the side. I know I've had worse than public school cafeteria pizza, which I have a vague nostalgia for even though I know it was objectively terrible.
I love buffalo chicken pizza, but I've never had it with celery as a topping (why would you even do that?). The one my sister and I recently had included small amounts of bleu cheese with the mozzarella.

Because wings are often served with bleu cheese dip and celery on the side.
 
For me it's chicken Caesar salad pizza, the best 'za.

personally anything is better then Pepperoni, ill never understand why thats the default Pizza topping, I love Bacon, but it has to be soft enough, I feel a lot of Pizza places overcook the bacon. Ham and Ground Beef are also good
disagree, if it's cupped, butcher-made pepperoni the chain stores don't serve, it's a great ingredient on any pizza.
Cook-flat pepperoni is an abomination. The biggest perk of cupped is that the grease it entraps makes every bite more tasty. Definitely only on special occasions though

I sort of miss this stuff too. It is objectively not very good pizza but as school food went, it sure beat the shit you get from zogslop companies like Aramark (literally the same people who provide much prison food). I'm pretty sure it's exactly what they made at my middle school including the weird crust (pourable pizza crust batter wtf).

At the K-12 level, or at last up through middle school, there's really no such thing as "bad pizza" for most kids.

When I was in 6th or 7th grade, someone in the kitchen fucked up and loaded up the pizzas with tons of shredded carrot. Put me off cafeteria pizza for the rest of middle school.
