Course ground brown mustard or a nice tangy Dijon is all a hotdog needs. I like the mielle brand from France. They sell that shit at walmurt so don’t act like I’m throwing some boogie bullshit at you, hotdogs are for everyone . But a good hotdog needs a good mustard,

People are sometimes afraid to go with raw white onions because, well, your breath. But I've loved them on hotdogs since I was a kid. They're also delicious and appropriate being grilled or sautéed on a hotdog, but still: Raw hits just right.

Agreed on the Dijon but I'd go for a hot English or German mustard if that wasn't available. And Maille is perfectly cromulent Dijon to have. No problem with that.

Chopped onions are a definite yes. Maybe some pickled hot peppers / jalapenos or kimchi.

Ballpark mustard is definitely a regional thing. I love it and prefer it to others for sausages and hot dogs, but that's mostly because I'm from NE Ohio where it's extremely popular.

This is an upstate New York thing(Syracuse) but the area specializes in "coneys" we call them which is a white hotdog made with veal, pork, egg whites, and spices which are absolutely fantastic.

I like to add some german style mustard to them and that's all you need.
