This is the one part of your post I respectfully disagree with. Nick isn't anywhere near as smart as he thinks he is.and he had even fewer, if any, that could match him intellectually.
His interactions with police on the day of his arrest prove this (i.e. the fact that he interacted with them at all).
The fact that he didn't study engineering "cuz math is hard" also prove this.
Nick's not a dribbling retard (yet), he's something even worse. A midwit.
Any linguist worth their salt will tell you that most concepts in law aren't super complicated, it's that lawyers suck at writing, and it's intentional. The legal community is a pack of blue bloods who believe everyone else is beneath them (no offense @AnOminous). They rely on high-falutin' credentials and jargon to put themselves on a pedestal above the laymen.
The law is hard for the everyman to understand, and that's just the way they like it. Nick is not alone in his belief that he can pilpul his way out of anything by saying the magic words; he's just lulzily bad at it.
When you consider Nick's penchant for annoying semantic quibbling, it really isn't a surprise he has a law degree.
