What stake does the government have in fighting this? I don't understand. They arrested Nick and charged and convicted him, but he has enough pull with them that they won't release body cam of his arrest?
Assuming you're talking about the release of the bodycam, I'd guess the state either fucked up something and want to hide illegal actions, it being a part of the plea deal would be illegal since they should've mentioned it to the judge among other things. If it gets released, maybe it'll come out that it was part of the plea deal (probably via Nick).
Or they just don't like people looking over their shoulder when they're doing their job. Being scrutinized like that isn't fun, but then they took the wrong profession by working for the government.

This is where occams razor applies

Most likely nick made a plea to the court not for himself but for the children (but mainly for himself) and the court granted that not realizing what Nick's actually play was.

With nick peddling these photos he claims police took can have a two fold effect

1. It refutes his claims to privacy for the kids
2. It opens up the argument that there is public interest now because there is actively something being hidden (if the photos were faked which they were) by nick and again see pount one

I don't see it. I just don't. The man simply doesn't have the ordnance. He's got nothing. Where is the content? There was a new story concerning Kayla in the shower at the end, and that's about it. If you look at Elb's channel, there is a grand total of 20 minutes of clippable content, from a five hour show.

If he went on "show x" this still would have been a bust. At best, it would have just been less annoying, and over quicker.

Which is not necessarily to defend Kiki. Her now palling around with the two Ethans and Mersh is gross, but that's a different issue.

It looks like what happened is that, in an attempt to avoid a public scandal, they undercharged him to an extent that is in itself scandalous. We know that they traded away the child endangerment charges in the plea deal, and the public would probably not approve of that decision if they could see the bodycam footage of the drug safe, on the floor in a bathroom the children can access, with part of a bag full of cocaine hanging out of it. Additionally, after he got his sweetheart deal, Nick has been accusing the sheriff's department of stealing some of his drugs for personal use. It seems far more likely that the crooked sheriff, wanting to avoid the scandal of possession with intent to distribute charges being filed against a prominent local celebrity and the possible DEA involvement that could come from that, ordered the destruction of enough of Nick's stash to push it under the limit and restrict the charge to simple possession. I thought it may have been 5-10% that was destroyed, but with the efforts to suppress the bodycam footage, I wouldn't be surprised if it were an amount large enough to be immediately obvious from the footage, like 25-50%.
 
This accusation has been particularly boggling to me, because what was Nick expecting to happen to his cocaine? It’s not like he was going to get any of it back.
Maybe he said that during some of the pleabargaing behind the doors and everyone there thought it was just a joke, while Nick was dead serious.

She was a terrible host. Gabe said they weren't going to drag it out and proceeded to drag it out for a few hours.

Her interruptions were so low-IQ they made Warsli seem like an intellectual, adding absolutely nothing good to the proceeding but prolonging the pain. Of the hour I watched she didn't ask a single pointed question and she struggled to play clips.

She honestly needs to just get a job, she's not remotely entertaining and not nearly cute enough to get by on her looks.
