I remember Kilo class ships from an old SSI computer game called North Atlantic '86. Back then they were relatively primitive and cheap diesel subs that the Russians would try to sneak close to US carrier groups. That was 40 years ago. I can only imagine what sort of unholy death traps they must be like now. At least they aren't nuclear-powered.

I'm going to tl;dr:
The Kilo sub, in its day, was diesel-electric fitted with acoustic paneling which is to say, sheets of cork. Back in its day, when not fucked by Soviet maintenance, it was very quiet when running on batteries and resistant to active sonar. They were a legit sub and would have been a threat in the north atlantic in the 80s if things had popped off, even if they needed to surface and burn diesel to recharge their batteries.

However, in the Persian gulf, they are massively fucked as the gulf is shallow enough for satellites to see into the water.
That was also "in the 80s" and the US/NATO has spent the past 40 years developing countermeasures to the Kilo.

I also weep to think of the state of the command systems (radar, sonar, etc)

Iran might be defacto allied with China but the reverse is far from true. China is not going to bat for the Eternal Persian. But Iran has a lot of Oil, China has an unslakable thirst, so China is going to sell Iran everything they think they can get away with.

Why did Iran build a tens of thousands of pretty decent hypersonic missiles but not build up more facilities to launch said missiles or even bother improving their AD? Like they went from launching 600+ in a day to like 30 and some shitty drones.

As I've said before, most analysts ballpark Iranian missiles with a CEP of 100-300m, so this is simply not true. Iran absolutely has the ability to target specific blocks or complexes, and they instead choose to sling it at a hospital.

Most of the Iranian missiles have been mid tier ballistic missiles, only the most recent attacks did we see their newer HGVs in action. To answer the question though, making a big rocket loaded with a bomb to fly in a parabolic arc to hit something the size of a city block is not particularly hard once you know how to do it. The guidance systems are not particularly complicated, especially if you're using something like inertial guidance, which many of the Iranian missiles are. SAMs are genuinely hard to make, especially ones capable of engaging modern Western fighters. That capability requires totally different, and far more advanced, technology compared to slinging a ballistic missile at Tek Aviv.

There is a rule in defense economics, which broadly states "the interceptor always costs more than whatever it intercepts." To give you an idea, in Iraq, the US was using Patriots to intercept Scuds. Scuds cost about a million each, whereas a single patriot launch costs between four and seven, depending on the variant.
