Beef Wellington is a dumpling.

I don't know why shit like Kartoffelkloesse or Knoedel is considered a dumpling.
Because they're round. Iirc gnocchi are also consider dumplings, they are technically pasta too. So I would consider those "bread dumplings", some foods are just hybrids like that. Though your point about wellington being cooked in it's juices is similar to a dumpling it isn't one because typically it is served like a steak. Also, to talk about size again, "bite sized" can still refer to something that needs one or two bites to consume. So though they can't be eaten comfortatablty in one bite I would still consider maultaschen and kinkhali dumplings and wellington not.
My point is, it needs to be prepared and servered like a dumpling.

I don't necessarily agree with this idea however I do think that to be a dumpling, the food must be TYPICALLY cooked with water. Boiling and steaming are the most common forms. Fried dumplings are an exception to the rule (deep fried pizza doesn't stop being pizza despite the unorthodox cooking method).
And even fried gyoza/jiaozi are very often cooked in a manner that is more like a hybrid of fried and steamed. (You sometimes get ones that are just straight deep fried and crispy all around, but IMO that's not nearly as good as the kind that come out part steamed and part crispy.)

Yeah, fried gyoza are usually fried, then a bit of water dumped in the pan and covered so they steam a bit. Very nice.

imo a dumpling is any food which uses a carb to completely seal in moisture of whatever is inside it, cooking it in its own juices and savory. this is the absolute peak of any food. I love dumplings in every cuisine I've ever had them in and I've noticed inferior cultures do not have dumplings. I am not referring to grain balls, I don't know why shit like Kartoffelkloesse or Knoedel is considered a dumpling.
This is outright wrong, boring grain-ball dumplings are the original dumplings and filled dumplings only came about later to be inserted into the dumpling family. A knoedel has stronger dumpling legitimacy than a beef wellington, although they're clearly both dumplings by any metric.

Well there is no English word for tasche which is that the Germans call it, tasche meaning pocket. The closest word in English would basically be hot pocket, so I guess I can say I love hot pockets.
 
Chicken and Dumplings
This is an interesting one. What, precisely, would one define the meal as?

Because I have a family recipe that I took for granted as being "the" recipe. And then I looked it up online and went "what the fuck is all of this shit?" There is a seemingly huge variety of different ways the dumplings are made. I use a recipe out of a cookbook made in the 30s that is essentially flour, baking powder, salt and shortening cut together into pea-size crumbles and then add milk until wetted, then drop dollops into the boiling chicken stew and cook. It's my favorite comfort food meal of all time basically, the dumplings are so fluffy, and it blows my mind that there is no one "standard" dish for this food like there is for, say, pizza or spaghetti. I saw a variation of the recipe where they basically just have biscuit dough on top and I got actually a little bit mad at how "wrong" it was. Foodtism moment.

You sound evil. You sound like you're rejecting your blood family's definition of dumplings. A real member of the tribe you're in would defend your family's definition of dumplings to the death, regardless of logic or facts.

Dead wrong. Beef Wellington is a meat PASTRY. If it were a pie, then where is the pie dish?

If Joah had his way, we'd classify loaf bread a dumpling. Absolute insanity, but id expect no less from a Panhandler, Flo-ridian.
 
The beef wellington is a beef pastry log.
The reason its not a pie is a pie usually has the meat ground or minced. Or cubed in the case of chicken or turkey pot pies.

I dont think it's fair to call it a dumpling considering beef wellingtons are always of a significant size.

The best way to categorize Beef wellington is to call it a savory log or beef pasty log of you were to find a generic name.
It's unable to be a dumpling due to its size and how its made as a pastry.
