Though your point about wellington being cooked in it's juices is similar to a dumpling it isn't one because typically it is served like a steak. Also, to talk about size again, "bite sized" can still refer to something that needs one or two bites to consume. So though they can't be eaten comfortatablty in one bite I would still consider maultaschen and kinkhali dumplings and wellington not.I don't know why shit like Kartoffelkloesse or Knoedel is considered a dumpling.

Boiling and steaming are the most common forms. Fried dumplings are an exception to the rule (deep fried pizza doesn't stop being pizza despite the unorthodox cooking method).

And then I looked it up online and went "what the fuck is all of this shit?" There is a seemingly huge variety of different ways the dumplings are made.
