This is utter food snobbery nonsense. It is not necessary to sauté the protein when slow-cooking. The Maillard effect might add a little more flavour but that can be compensated with various spices and veggies one might add to the pot.
In fact, I would argue that if heavy spices are going to be used, don't even bother to sauté the protein. It's a waste of time.
