Thing is though, such a hypothetical faith would be impossible to sustain long term in a geographically tiny location (i.e. greece) or a larger but sparsely populated location (i.e. scandinavia and north germany) because the sheer numbers, wealth, and military power of christian/islamic kingdoms would sooner or later draw them in by hook or by crook as happened with various pagan faiths in europe and the middle east IRL.

For Koine to not be the common tongue of the area you would need to undo the entirety of the Hellenistic age and the conquests of Alexander.
TL;DR: Hellenism was doomed from the moment the New Testament was written in Koine.

Easily Paganism's biggest flaw, even with organized ones like with Roman, there are many different ways to practice it and view the gods, it's fine and even promoted to be a degenerate. This is also why the Abrahamic religions lasted so long. Hinduism is the only large-scale pagan religion left, if it weren't for the muslims just taxing them, Hinduism wouldn't be around as much.
