What if he blended his veggies into a very fine consistency, and mixed them into sauces? You can pour the mush into an ice cube tray, and freeze individual veggie-cubes for easy mixing and consumption. I do this to get more veggies into my diet, and you hardly notice them in sauces.

@Otterly Can you give me a rough idea of how you incorporate Courgette into a Chocolate Muffin? I'm equal parts intrigued and horrified.

@Mound Dweller How about veggie burgers? I have never been fully anti vegetables, but I was a lot worse than I used to be and I found fast food vegetarian burgers could actually be pretty good. I even learned how to make them myself.
 
I did a bean patty once, and the cheese was made out of cashew milk. Every single item on the burger was vegan

It was tasty, but nowhere as satisfying as a real, true and honest cheeseburger. Very expensive to make too

Look up zucchini bread recipes. Take that and add cocoa powder and maybe a little extra fat.

Also, I had to look up what the fuck a courgette was and was a bit surprised to learn that it's just zucchini. TIL.

It's a different beast for sure. If you go in expecting meat you are going to be dissapointed. Vegan is even more of a downgrade from Vegetarian though, the version I'd buy and eventually make myself allowed for eggs and real cheese.

Apparently Vegans ruined restaurants for Vegetarians. I feel for them because they were way less annoying than Vegans and some of their food actually tasted good.

I think vegan food can be very tasty, the problem is that vegans try to market fake food trying to mimic animal-based products. I'll never come out right. The vegan patty threw me off because of the lack of fat, texture plays a big role if you're expecting protein on the dish

Anything not made in an attempt of mimicking animal products is fine. Plenty of antipasto and entrees are vegan if you think about it

I don't have a personal favorite, it can range from ratatouille to thai sticky rice and mango
